This delightful Dandelion Honey recipe is a natural, homemade syrup made from fresh dandelion petals, sugar, and lemon juice. It mimics the taste and texture of honey but is entirely plant-based and uses simple ingredients you can forage yourself. Perfect for sweetening teas, spreading on toast, or drizzling over desserts, this syrup is a wonderful way to enjoy the flavors of spring.

Ingredients

Dandelion Honey Ingredients

  • 3 cups fresh dandelion petals
  • 3 cups water
  • Juice of half a lemon
  • Sugar, weight equal to the strained dandelion water

Instructions

  1. Collect Dandelion Flowers: Gather a bowl full of fresh dandelion flowers from a clean, unpolluted area. Allow the flowers to sit in the bowl for a while so any small insects can leave.
  2. Prepare Petals: Remove the petals from the dandelion flowers and set them aside.
  3. Boil Petals: In a saucepan, combine three cups of water, the dandelion petals, and the juice of half a lemon. Bring to a boil, then reduce to a simmer and cook for about 30 minutes to extract the flavor.
  4. Strain the Mixture: Pour the mixture through a sieve into a bowl, pressing the petals to extract all the liquid. Discard the petals. This liquid is your dandelion water.
  5. Measure Sugar: Weigh the dandelion water and measure out an equal amount of sugar in a separate bowl.
  6. Create Syrup: Return the dandelion water to the saucepan and bring back to a boil. Add the measured sugar and stir continuously until the sugar dissolves and the syrup thickens slightly. The syrup will thicken further as it cools.
  7. Store: Pour the syrup into a clean glass jar and allow it to cool completely.
  8. Enjoy: Use your homemade dandelion honey to sweeten bread, tea, or desserts.

Notes

  • Make sure to pick dandelions from areas free of pesticides and pollution.
  • Leaving some dandelions behind helps support local bee populations and encourages sustainable foraging.
  • The syrup will continue to thicken as it cools, so don’t worry if it seems a bit thin when hot.
  • Store the dandelion honey in a sealed jar in the refrigerator for up to a month.
