This Homemade Egg Noodles recipe offers a simple and classic way to prepare fresh, tender egg noodles from scratch. Made with basic pantry ingredients like all-purpose flour, eggs, and salt, these noodles have a rich texture and delicate flavor. Perfect for soups, stir-fries, or served with your favorite sauce, these noodles bring homemade charm to any meal.

Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt

Wet Ingredients

  • 3 large egg yolks
  • 1 large egg
  • 3-4 tablespoons cold water

Instructions

  1. Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour and salt to evenly distribute the salt in the flour.
  2. Prepare Egg Mixture: In a separate bowl, whisk the 3 egg yolks, 1 whole egg, and 3 tablespoons of cold water until combined.
  3. Combine Ingredients: Make a well in the center of the flour mixture and pour in the egg mixture. Using your hands, slowly incorporate the flour into the eggs, mixing until a rough dough ball forms. Add an additional tablespoon of water if the dough seems too dry.
  4. Knead the Dough: Transfer the dough onto a lightly floured surface and knead thoroughly until the dough is smooth, elastic, and no longer sticky. Add flour a tablespoon at a time as needed during kneading to achieve the right consistency.
  5. Roll Out Dough: Using a rolling pin, roll the dough out to approximately 1/8 inch thick. Keep dusting the rolling surface and dough lightly with flour so it does not stick.
  6. Cut Noodles: With a sharp knife or a pizza cutter, cut the rolled dough into thin strips to form the egg noodles. Carefully loosen the strips and spread them out to dry for 20-30 minutes at room temperature before cooking.
  7. Cook Noodles: Bring a large pot of salted water to a boil. Add the egg noodles to the boiling water and cook for 10-12 minutes, or until tender but still firm to the bite.
  8. Drain and Serve: Remove the cooked noodles with a slotted spoon or drain them in a colander. Use immediately in your favorite recipes or enjoy plain.
