These Starbucks-inspired oat bars offer a delicious blend of wholesome oats, rich butter, and natural maple syrup, perfect for a nutritious snack or breakfast treat. They feature a tender, chewy texture enhanced by a subtle sweetness and a hint of vanilla.

Ingredients

Oat Base

  • 3 ¾ cups quick oats
  • 1 teaspoon salt

Wet Ingredients

  • ½ cup unsalted butter
  • ½ cup packed light brown sugar
  • ¼ cup maple syrup
  • ¼ cup unsweetened almond milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 325°F (163°C) and line an 8×8 inch baking pan with parchment paper to ensure easy removal of the bars later.
  2. Process Oats: In a food processor, grind 2 cups of the quick oats until they become a fine, flour-like consistency. Transfer this to a large mixing bowl and add the remaining 1¾ cups of quick oats along with 1 teaspoon of salt. Stir to combine the dry ingredients evenly.
  3. Melt and Mix Wet Ingredients: In a small saucepan over medium heat, melt ½ cup of unsalted butter with ½ cup packed light brown sugar and ¼ cup maple syrup, stirring until the butter is completely melted and the sugar is fully dissolved. Remove from heat, then whisk in ¼ cup unsweetened almond milk and 1 teaspoon vanilla extract. Allow the mixture to cool slightly to avoid cooking the oats prematurely.
  4. Combine and Press: Pour the cooled butter mixture into the oat mixture and stir thoroughly with a wooden spoon until well combined. Transfer the mixture to the prepared baking pan, pressing the oats evenly into the pan to ensure a compact, uniform layer.
  5. Bake the Bars: Place the pan in the preheated oven and bake for 15-20 minutes, or until the edges turn a light golden brown, indicating the bars are set and cooked through.
  6. Cool and Slice: Allow the bars to cool completely in the pan to firm up properly. Once cooled, lift out using the parchment paper and slice into 16 equal bars for serving.

Notes

  • Storage: Store the oat bars in an airtight container in the refrigerator for up to 5 days to maintain freshness.
  • Freezing: These bars freeze well for up to 2 months. Freeze them solid on a baking sheet first before transferring to a freezer-safe container or bag. Alternatively, wrap individual bars in parchment paper. Thaw in the refrigerator or at room temperature before consuming.
