This homemade strawberry syrup is a vibrant, sweet, and tangy addition perfect for pancakes, desserts, or beverages. Made with fresh strawberries simmered with sugar and lemon juice, it captures the essence of summer in a bottle, with an optional hint of vanilla for added depth.

Ingredients

Strawberries & Syrup Base

  • 4 cups fresh strawberries, hulled and halved
  • 1 cup granulated sugar
  • 1 cup water

Flavorings

  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Combine Ingredients: In a large saucepan, combine the fresh strawberries, granulated sugar, and water. Place the pan over medium-high heat and bring the mixture to a boil, stirring occasionally to dissolve the sugar.
  2. Simmer: Once boiling, reduce the heat to medium-low and let the mixture simmer gently for 15-20 minutes. During this time, the strawberries will soften and the liquid will develop a rich, deep red color.
  3. Mash Strawberries: Using a potato masher or the back of a spoon, gently mash the strawberries in the saucepan to help release more juice and enhance the syrup’s flavor.
  4. Strain Mixture: Remove the saucepan from heat and pour the contents through a fine-mesh sieve into a bowl, pressing down lightly to extract as much liquid as possible while discarding the solids.
  5. Add Lemon Juice & Vanilla: Stir in the lemon juice and the optional vanilla extract into the strained syrup to brighten and deepen the flavor profile.
  6. Cool & Store: Allow the syrup to cool to room temperature before transferring it into a clean bottle or jar. Store the strawberry syrup in the refrigerator for up to two weeks, ready to elevate your favorite dishes.

Notes

  • Be sure to use fresh ripe strawberries for the best flavor and color.
  • Adjust the sugar amount if you prefer a less sweet or more intense strawberry taste.
  • The lemon juice helps balance the sweetness and preserves the bright color.
  • Vanilla extract is optional but adds a warm and aromatic note.
  • Strain thoroughly for a smooth syrup or leave some pulp for texture if preferred.
  • Store refrigerated and consume within two weeks for freshness.
