This Honey & Curry Roasted Cauliflower recipe delivers a flavorful and colorful vegetable side dish, balancing the warmth of curry spices with the sweet touch of honey and the crunch of toasted coconut. Perfectly roasted until tender and lightly caramelized, this dish is easy to prepare and a delightful addition to any meal.

Ingredients

Cauliflower

  • 1 head cauliflower, washed and cut into uniform florets

Seasoning & Toppings

  • 2 tablespoons coconut oil or oil of your choice
  • 2-4 teaspoons curry powder, to taste
  • 1-2 tablespoons melted honey, to taste
  • 2 tablespoons toasted coconut
  • Sea salt, to taste

Instructions

  1. Preheat Oven: Preheat your oven to 450 degrees Fahrenheit (232 degrees Celsius) to ensure it’s hot enough for roasting the cauliflower.
  2. Prepare Cauliflower: In a large bowl, toss the cauliflower florets with the coconut oil, making sure each piece is well coated for even roasting.
  3. Add Curry Powder: Sprinkle the curry powder over the cauliflower and toss again to distribute the spices evenly, adjusting the amount according to your taste preference.
  4. Roast Cauliflower: Spread the coated cauliflower evenly on a non-stick baking sheet and place it in the oven. Roast for about 15 minutes, stirring every 5-7 minutes to prevent burning and to promote even browning.
  5. Add Honey: Once roasted to your desired tenderness and color, remove the cauliflower from the oven. Either drizzle the melted honey on top or return the cauliflower to the bowl and toss with the honey for better coating, being gentle to avoid breaking the florets.
  6. Finish and Serve: Sprinkle sea salt and toasted coconut over the cauliflower. Serve warm and enjoy the combination of savory, sweet, and crunchy textures.

Notes

  • Adjust the amount of curry powder and honey based on your preferred spice and sweetness levels.
  • Use a non-stick baking sheet to prevent sticking and ease cleanup.
  • To toast coconut, spread it on a dry skillet over medium heat and stir frequently until golden brown.
  • Cauliflower florets can be cut slightly larger if you prefer a firmer bite after roasting.
  • Serve this dish as a side to grilled meats, fish, or a vegetarian main course.
