Honey Lime Chicken Avocado is a vibrant and delicious dish that combines tender honey-lime marinated chicken strips with creamy avocado and fluffy jasmine rice. Ready in under 30 minutes, it’s a perfect quick meal bursting with fresh flavors and a touch of sweetness, ideal for a wholesome lunch or dinner.

Ingredients

For the Honey Lime Marinade and Chicken

  • 2 boneless, skinless chicken breasts, sliced into strips
  • 2 tbsp golden honey
  • 2 tbsp soy sauce (or tamari)
  • 2 tbsp fresh lime juice
  • 1 tsp fresh lime zest
  • 1 tbsp olive oil
  • Salt and freshly ground black pepper to taste

For Assembly

  • 2 cups cooked jasmine rice
  • 12 ripe avocados, sliced
  • Fresh lime wedges for garnish
  • 2 tbsp freshly chopped cilantro or chives
  • 1 tsp toasted sesame seeds (optional)

Instructions

  1. Prepare the Honey Lime Marinade: In a medium bowl, whisk together the honey, soy sauce, fresh lime juice, lime zest, olive oil, salt, and pepper until well combined to form a flavorful marinade. Add the chicken strips and toss thoroughly to coat each piece. Let the chicken marinate for at least 20 minutes to absorb the vibrant flavors.
  2. Cook the Chicken: Heat a large skillet over medium-high heat. Once hot, add the marinated chicken strips in a single layer. Cook for 3–4 minutes on each side until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. Prepare the Rice Base: Pack the cooked jasmine rice firmly into a round mold, small bowl, or measuring cup. Carefully invert the mold onto a serving plate to create a neat rice cylinder as the base of your dish.
  4. Arrange the Avocado: Artfully arrange the sliced ripe avocado on top of the rice mound, layering it evenly for an appealing presentation and creamy texture.
  5. Assemble the Dish: Place the warm honey lime chicken strips over the avocado-covered rice. Drizzle any leftover pan sauce from the skillet over the chicken and rice stack to infuse extra flavor.
  6. Garnish and Serve: Sprinkle freshly chopped cilantro or chives and toasted sesame seeds over the dish for a fresh and decorative touch. Serve immediately alongside fresh lime wedges for an extra zesty burst.

Notes

  • For a shiny glaze, whisk 1 tsp cornstarch into 2 tbsp water and simmer this mixture in the skillet with any leftover marinade for 1 minute. Spoon the glaze over the rice and chicken stack for added gloss.
  • If a round mold is not available, a standard measuring cup or small bowl can be used to shape the rice.
  • To make this recipe gluten-free, substitute tamari or a certified gluten-free soy sauce in place of regular soy sauce.
  • Avocado browns quickly once sliced; slice it just before assembling the dish. Squeezing fresh lime juice over the avocado slices helps prevent browning.
