Ingredients

Honey Mustard Sauce

  • 1 tablespoon olive oil
  • 2 tablespoons Maille Rich Country Dijon mustard
  • 2 tablespoons honey
  • 2 tablespoons lemon juice
  • 1 teaspoon grated lemon zest
  • 1 garlic clove, minced
  • 1 teaspoon dried dill

Vegetables

  • 1 large zucchini, sliced
  • 1 red bell pepper, diced
  • 1 small bunch asparagus, cut into thirds
  • Sea salt and pepper, to taste
  • 1 tablespoon olive oil

Salmon and Garnish

  • 4 (6-ounce) salmon filets
  • Sea salt and pepper, to taste
  • 2 tablespoons chopped fresh chives
  • 1 tablespoon olive oil (remaining from the 2 tablespoons total)

Instructions

  1. Preheat the grill: Heat your grill to high to ensure it’s ready for cooking the salmon packets evenly.
  2. Make the honey mustard sauce: In a small bowl, whisk together 1 tablespoon olive oil, Maille Rich Country Dijon mustard, honey, lemon juice, lemon zest, minced garlic, and dried dill until smooth.
  3. Prepare the vegetables: In a medium bowl, toss sliced zucchini, diced red bell pepper, and asparagus pieces with the remaining tablespoon olive oil and season with sea salt and pepper to taste.
  4. Assemble foil packets: Cut four large pieces of foil. Divide the vegetables evenly onto each foil piece, forming a bed for the salmon. Place one salmon filet on top of each vegetable pile. Season the salmon with sea salt and pepper.
  5. Add sauce and seal packets: Spoon the honey mustard sauce evenly over each salmon filet. Fold the foil over and seal almost completely, leaving a small vent for steam to escape.
  6. Grill the packets: Place the foil packets on the grill and close the lid. Grill for 15 to 18 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. Serve: Remove the packets from the grill carefully, open them, and sprinkle chopped fresh chives over the top before serving.

Notes

  • You can use other vegetables like cherry tomatoes, mushrooms, or green beans depending on your preference.
  • Make sure not to overcook the salmon; it should be tender and flaky but still moist.
  • Foil packets also make cleanup simple and help retain the food’s natural juices and flavors.
  • For even cooking, ensure your foil pieces are large enough to fold securely with some room for steam to circulate.
  • If you don’t have a grill, you can bake the packets in a preheated oven at 400°F (200°C) for about 18-20 minutes.
