  • 3-5 Green onions, Greens only (approximately 1 cup of gently compressed greens)

Instructions

  1. Preheat the Oven or Dehydrator: Preheat your oven to its lowest setting and line a baking sheet with parchment paper. Alternatively, set the dehydrator to 135°F and prepare a tray with a silicone liner or parchment paper.
  2. Prepare the Green Onions: Wash and dry the green onion greens thoroughly, removing the green tops from the white parts.
  3. Chop the Greens: Roughly cut the green onion greens into 3 or 4 pieces to fit easily in your food processor. Pulse for a few seconds, stop and stir, then pulse again until finely chopped.
  4. Combine with Sea Salt: Add the sea salt to the chopped greens in the food processor and blend until fully combined and evenly mixed.
  5. Spread the Mixture: Pour the green onion and salt mixture onto the prepared baking sheet or dehydrator tray. Spread it thinly and evenly to allow for proper drying.
  6. Dry the Mixture: Place the tray in the oven or dehydrator. Allow the mixture to dry for 2-3 hours in the oven, stirring every hour, or 4-5 hours in the dehydrator, until fully dry.
  7. Cool and Store: Remove the dried green onion salt from heat and let it cool completely. Store it in an airtight jar, where it can keep its freshness and flavor for about a year.
