Ingredients

Protein and Dairy

  • 1 lb boneless, skinless chicken breasts
  • 1 cup heavy cream
  • 2 tablespoons margarine or butter

Liquids and Broth

  • 10.5 oz condensed chicken broth
  • 3 cups water
  • 21 oz condensed cream of chicken soup (2 cans)

Vegetables and Herbs

  • 2 cups matchstick carrots
  • 3 cups shredded spinach
  • 2 teaspoons Italian seasoning blend

Other Ingredients

  • 18 oz potato gnocchi
  • 2 teaspoons salt
  • 2 teaspoons pepper

Instructions

  1. Prepare the chicken: Cut the boneless, skinless chicken breasts into bite-sized pieces and set aside.
  2. Sauté the chicken: Set the Instant Pot to ‘Sauté Less’ mode for 5 minutes. Add a dab of margarine or butter to the pot, then add the chicken pieces. Cook, stirring occasionally, until the Instant Pot automatically turns off. The chicken might still be slightly pink at this stage.
  3. Add liquids and ingredients: Pour the condensed chicken broth and water into the pot. Add the potato gnocchi, spreading it gently to ensure it is submerged in the liquid. Pour the condensed cream of chicken soup on top.
  4. Season and add vegetables: Sprinkle in the salt, pepper, and Italian seasoning. Add the matchstick carrots and shredded spinach.
  5. Pressure cook: Place the lid on the Instant Pot, turn the steam release handle to the sealing position, and set the Instant Pot to Pressure Cook on High for 3 minutes.
  6. Release pressure: Once cooking is complete, allow the Instant Pot to naturally release pressure for 5 minutes. Then turn the steam release handle to venting position to complete a quick release.
  7. Finish the soup: Remove the lid and stir the soup well. Add the heavy cream and stir again until fully incorporated.
  8. Serve: Ladle the soup into bowls and enjoy your creamy, hearty Instant Pot Chicken Gnocchi Soup.

Notes

  • Using condensed soups simplifies the recipe and adds creaminess but check labels if you prefer low sodium options.
  • Make sure the gnocchi is fully submerged under the liquids to cook evenly under pressure.
  • If you like a thicker soup, you can reduce the water slightly or add an extra can of cream of chicken soup.
  • For a lower fat option, substitute heavy cream with half-and-half or whole milk, but the soup won’t be as rich.
  • Always allow the natural pressure release for at least 5 minutes to ensure the soup finishes cooking and avoid splattering on quick release.
