Featuring a chuck roast seasoned with garlic, steak seasoning, and onions, it’s cooked to perfection in beef broth and served with a rich, thickened gravy. Ideal for a comforting, hearty meal, this recipe combines the savory flavors of French onion soup with the convenience of an Instant Pot.

Ingredients

Meat and Seasonings

  • 3 pounds boneless beef chuck roast, cut into 10 chunks
  • 3 tablespoons steak seasoning (such as Montreal steak seasoning)
  • 1 teaspoon kosher salt (optional if steak seasoning is salty)
  • 4 cloves garlic, minced

Vegetables and Broth

  • 2 large white or yellow onions, sliced
  • 1 ½ cups reduced-sodium beef broth, divided
  • 1 tablespoon Better Than Beef Bouillon
  • 1 bay leaf

Thickening and Finishing

  • 2 tablespoons cornstarch

Instructions

  1. Prepare the meat: Place the chuck roast pieces in the Instant Pot inner pot. Sprinkle the steak seasoning and kosher salt evenly over the meat to season all sides thoroughly.
  2. Add aromatics and broth: Pour 1 and 1/4 cups of the beef broth over the meat. Add the minced garlic on top, then layer the sliced onions over the garlic. Finally, add the Better Than Beef Bouillon and place the bay leaf on top.
  3. Pressure cook: Close and lock the Instant Pot lid, ensuring the pressure release valve is set to sealing. Select manual high pressure and set the timer for 60 minutes to cook the beef until tender.
  4. Release pressure: After cooking completes, allow the pressure to release naturally for 25 minutes before carefully unlocking and removing the lid.
  5. Prepare the meat and gravy: Remove the meat from the pot and shred it with forks. Discard the bay leaf from the pot. In a small bowl, mix together the remaining 1/4 cup beef broth and 2 tablespoons cornstarch to create a slurry.
  6. Thicken the sauce: Turn the Instant Pot to sauté mode. Stir in the cornstarch mixture to the pot and cook, stirring frequently, for about 2 minutes or until the gravy thickens to your preferred consistency.
  7. Serve: Spoon the rich, thickened gravy over the shredded meat and enjoy a satisfying French onion flavored pot roast.

Notes

  • Chuck roast substitutions: Arm roast or rump roast also yield great results in this recipe.
  • Kosher salt can be omitted if your steak seasoning is already heavily salted.
  • Recommended steak seasoning: Montreal steak seasoning adds robust flavor but feel free to use your favorite blend.
