Ingredients

Rice

  • 1 ½ cups Arborio Rice (do not rinse)
  • 2 ¼ cups Water
  • ¼ teaspoon Salt

Pudding Mixture

  • 3 cups Whole Milk (or half and half)
  • ¾ cup Sugar
  • 3 Eggs
  • 1 teaspoon Vanilla Extract
  • ½ teaspoon Cinnamon (optional)
  • ¾ cup Raisins (optional)

Instructions

  1. Prepare Rice: Add the Arborio rice, water, and salt to the Instant Pot. Secure the lid and set the valve to Sealing. Select the Pressure Cook setting and cook on High pressure for 3 minutes. After the cooking cycle ends, allow a natural pressure release for 10 minutes without disturbing the pot.
  2. Mix Dairy and Eggs: While the rice cooks, whisk together the whole milk, eggs, and vanilla extract in a medium bowl. Set this mixture aside until the rice is ready.
  3. Release Pressure and Add Mixture: After the natural release, carefully release any remaining pressure and open the lid. Stir the prepared milk and egg mixture, along with the sugar and cinnamon if using, into the cooked rice.
  4. Simmer the Pudding: Select the Sauté mode on the Instant Pot and gently bring the rice and milk mixture to a simmer, stirring constantly to prevent sticking or curdling. Once it begins to thicken slightly, turn off the Instant Pot and carefully remove the inner pot to a heat-safe surface.
  5. Add Raisins and Cool: Stir in the raisins if desired. Let the rice pudding cool; it will continue to thicken as it cools down.
  6. Serve: Serve the rice pudding warm or chilled, optionally topped with cream or whipped cream for an extra indulgent touch.
