Tender and flavorful yogurt marinated chicken thighs baked to perfection, featuring a creamy marinade infused with garlic, lemon, and aromatic spices. Juicy inside with a golden-brown crust, this dish is perfect for weeknight dinners or special occasions.

Ingredients

Chicken

  • 4 bone-in chicken thighs

Marinade

  • 1 cup plain full-fat yogurt
  • 4 garlic cloves, minced
  • 2 tbsp freshly squeezed lemon juice
  • 2 tsp ground cumin
  • 2 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper

Garnish

  • Fresh herbs (cilantro or mint), for garnish

Instructions

  1. Prepare the marinade: In a large bowl, whisk together the plain yogurt, minced garlic, fresh lemon juice, ground cumin, paprika, salt, and black pepper until the mixture is smooth and well combined.
  2. Marinate the chicken: Add the bone-in chicken thighs to the bowl and thoroughly coat them with the yogurt marinade. Cover the bowl and refrigerate for at least 1 hour, preferably overnight, to allow the flavors to deeply penetrate the meat.
  3. Preheat the oven: Set your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and facilitate easy cleanup.
  4. Bake the chicken: Arrange the marinated chicken thighs evenly on the prepared baking sheet. Bake for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the skin turns a beautiful golden brown.
  5. Rest and garnish: Remove the chicken from the oven and let it rest for 5 minutes to allow the juices to redistribute. Garnish with fresh cilantro or mint before serving for a burst of color and freshness.

Notes

  • Marinate overnight if possible for maximum flavor and tenderness.
  • Bone-in thighs provide juicier meat, but boneless thighs can be used for quicker cooking.
  • Serve with roasted vegetables, rice, or inside warm wraps for a versatile meal.
  • Make sure to use full-fat yogurt for the creamiest marinade; Greek yogurt works well too.
  • Check internal temperature with a meat thermometer to ensure the chicken is safely cooked.
