Islak Burger is a famous Istanbul street food known for its moist, flavorful patties soaked in a garlicky tomato sauce and served in soft, buttered buns. This recipe recreates the authentic wet burger experience, combining juicy beef patties simmered in a rich tomato-garlic sauce with buns steamed directly in the sauce, resulting in a deliciously tender and saucy burger experience.

Ingredients

For the Sauce

  • 3 garlic cloves
  • 150 milliliters (5 fluid ounces) tomato passata
  • 1 tablespoon olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste

For the Burger

  • 2 tablespoons olive oil, divided
  • 400 grams (14 ounces) minced (ground) beef (preferably freshly ground by your butcher)
  • 4 round hamburger buns, split in half through the middle and lightly buttered

Instructions

  1. Prepare the Garlic Tomato Sauce: Crush the garlic cloves with a pinch of salt using a mortar and pestle until a paste forms. In a large bowl, combine the crushed garlic, tomato passata, 1 tablespoon of olive oil, salt, and freshly ground black pepper. Mix well and set aside to enhance the flavors.
  2. Shape the Patties: Divide the minced beef into four equal portions and gently shape each into a round, flat patty about the size of your buns, ensuring not to compress the meat too much to keep them juicy.
  3. Quickly Sear the Patties: Heat the remaining 1 tablespoon of olive oil in a large frying pan over medium-high heat. Place the patties in the pan and sear each side quickly for about 1 minute to achieve a slight crust and lock in the juices.
  4. Simmer the Patties in Sauce: Pour the prepared tomato garlic sauce over the patties in the pan, reduce the heat to very low, and let them cook gently for 5 minutes. This allows the meat to absorb the flavors of the sauce thoroughly.
  5. Soften the Buns in Sauce: Push the patties to one side of the pan. Place the buttered hamburger bun halves face down directly onto the tomato sauce. Cover the pan with a lid and cook on very low heat for 10 minutes. This steaming process soaks the buns with the sauce, making them moist and tender, which is the hallmark of the Islak Burger.
  6. Assemble the Burgers: Finally, sandwich each tomato-soaked patty between two pieces of the softened bun halves. Serve immediately while warm and enjoy the rich, moist Turkish-style burger experience.

Notes

  • Use fresh ground beef for the best texture and flavor.
  • Do not overcrowd the pan to ensure even cooking and proper absorption of the sauce.
  • The slow simmer and covered steaming of the buns are essential to achieve the trademark moist texture.
  • Butter the buns lightly to add richness and prevent them from getting soggy too quickly.
  • Serve immediately after assembling to enjoy the buns at their moistest.
