Ingredients

Main Ingredients

  • ½ cup soy sauce (125 ml / 4.22 fl oz)
  • 3 tbsp brown sugar
  • 1 tbsp mirin
  • 1 tbsp honey
  • 1 tbsp red miso paste (or white miso for a sweeter taste)
  • 1 tbsp sesame seeds
  • ¼ apple (25 g / 0.88 oz, use a sweet variety like Pink Lady or Red Delicious)
  • ¼ onion (20 g / 0.7 oz)
  • 1 garlic clove
  • ½ tbsp ginger (fresh, grated)
  • 1 tsp sesame oil
  • 1 tsp lemon juice

Optional Ingredients

  • 1 tbsp gochujang (can substitute with ssamjang, doubanjiang, or ½ tsp chili powder)

Instructions

  1. Prepare Ingredients: Gather all ingredients. For best blending, add ingredients to the blender from hardest to softest starting with apple, then onion, garlic, ginger, red miso paste, and optional gochujang, followed by brown sugar, honey, mirin, sesame oil, lemon juice, and finally soy sauce.
  2. Blend Sauce: Pulse the blender briefly to break down the apple and onion, then blend continuously for 15-20 seconds until the sauce is smooth and homogenous.
  3. Add Sesame Seeds: Pour the blended sauce into a bowl and stir in the sesame seeds until evenly distributed.
  4. Alternative Hand Method: Finely grate the apple, onion, garlic, and ginger into a bowl. Mix in the red miso paste and optional gochujang using the back of a spoon to form a paste.
  5. Combine Remaining Ingredients by Hand: Add the sesame seeds, brown sugar, honey (warmed if thick), mirin, sesame oil, lemon juice, and soy sauce to the paste, mixing thoroughly until fully combined.
  6. Serve or Store: Serve the sauce immediately as a dipping sauce, or place it in an airtight jar and refrigerate overnight to allow flavors to meld and develop depth.

Notes

  • Using red miso provides a deeper savory flavor; white miso can be used for a sweeter, milder sauce.
  • Choose a sweet apple variety like Pink Lady or Red Delicious to balance the savory elements.
  • If your honey is crystallized, gently warm it for about 15 seconds before mixing to ensure smooth blending.
  • The optional gochujang adds a spicy kick and umami depth but can be substituted or omitted according to preference.
  • The sauce can be used as both a marinade for grilling or as a dipping sauce after cooking.
  • Allowing the sauce to rest overnight in the fridge enhances its flavor complexity.
