This Grilled Shrimp recipe features succulent shrimp marinated with a blend of olive oil, garlic, paprika, red pepper flakes, and lemon juice, then grilled to perfection. It’s a quick and flavorful dish that is perfect for summer barbecues or a tasty weeknight dinner, garnished with fresh parsley for a bright finish.

Ingredients

Shrimp Marinade

  • 2 lb shrimp, peeled and deveined
  • 1/4 cup olive oil
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1/4 tsp red pepper flakes
  • 4 garlic cloves, minced
  • 2 tbsp lemon juice, divided

Garnish

  • Fresh parsley, chopped

Instructions

  1. Prepare the shrimp: In a large bowl, combine the peeled and deveined shrimp with olive oil, paprika, salt, black pepper, red pepper flakes, minced garlic, and half of the lemon juice. Mix thoroughly to ensure the shrimp are evenly coated with the marinade.
  2. Soak the skewers: Place wooden skewers in water and let them soak for about one hour to prevent burning during grilling.
  3. Skewer the shrimp: Thread the marinated shrimp onto the soaked wooden skewers, making sure to space them evenly for even cooking.
  4. Preheat the grill: Bring your grill to medium heat, ensuring it’s hot enough to cook but not so hot that the shrimp burn quickly.
  5. Grill the shrimp: Place the shrimp skewers on the grill and cook for 2 to 4 minutes per side. The shrimp are done when they turn pink and opaque but remain tender.
  6. Finish and garnish: Once cooked, remove the shrimp from the grill, drizzle with the remaining lemon juice, and garnish with freshly chopped parsley before serving.

Notes

  • Get peeled and deveined shrimp to save time and effort during prep.
  • Soak wooden skewers in water for about an hour to prevent them from catching fire on the grill.
  • Don’t overcook the shrimp to avoid toughness and rubbery texture; they should be pink and opaque when fully cooked.
