This Kebab Shop Garlic Sauce recipe replicates the creamy, garlicky sauce often found in takeaway kebabs. Made with fresh garlic, mayonnaise, Greek yogurt, lemon juice, olive oil, and Middle Eastern spices like za’atar and oregano, it’s perfect as a dip, spread, or condiment for kebabs, sandwiches, salads, and more.

Ingredients

Garlic Paste

  • 3 Garlic cloves – peeled

Sauce Base

  • ¾ cup Mayonnaise (full-fat works best)
  • 2 TBLS Plain Greek Style Yogurt (or plain yogurt)
  • 2 TSP freshly squeezed Lemon Juice
  • 1 TBLS Extra Virgin Olive Oil (or olive oil)

Seasoning

  • ½ TSP Za’atar Spice Blend (store-bought or homemade)
  • 1/8 TSP Dried Oregano Flakes (more or less to taste)

Instructions

  1. Smash the garlic: Using a mortar and pestle, crush the peeled garlic cloves into a smooth paste. If you don’t have a mortar and pestle, you can pulse the garlic briefly in a mini blender or crush and smash using the flat side and back of your knife.
  2. Make the sauce: In a small bowl, combine the garlic paste with mayonnaise, Greek yogurt, lemon juice, extra virgin olive oil, za’atar, and dried oregano flakes. Stir thoroughly until everything is evenly mixed.
  3. Storing: Transfer the sauce to a sealed airtight container and refrigerate. The sauce stays fresh for 5-7 days. Use it as a flavorful addition to kebabs, salads, pizzas, sandwiches, burgers, or as a dip.

Notes

  • If you want a milder garlic flavor without strong garlicky bite, blanch the peeled garlic cloves in warm water for 5 minutes or microwave on high for 25-30 seconds before smashing.
  • Za’atar is a Middle Eastern spice blend typically containing sumac, dried thyme, sesame seeds, cumin, and oregano. Check ingredient labels if you are gluten intolerant.
  • Roasting the garlic is not recommended as it makes the garlic sweeter and changes the sauce flavor.
