Ingredients

Vegetables and Herbs

  • 2 medium green cabbages
  • 1 red bell pepper, diced
  • 1 small red onion, diced
  • 3 cloves garlic, minced
  • Fresh parsley for garnish (optional)

Protein

  • 1 lb shrimp, peeled and deveined
  • 1 lb smoked sausage, sliced

Seasonings and Oils

  • 2 tbsp olive oil or butter
  • 2 tsp Cajun seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the stuffed cabbage rolls later.
  2. Prepare Cabbage Leaves: Carefully separate the cabbage leaves, then blanch them in boiling water for 2-3 minutes until they are flexible and easy to roll. Drain and set aside on a clean surface.
  3. Cook Sausage: In a large skillet, heat the olive oil or butter over medium heat. Add the sliced smoked sausage and cook for about 5 minutes until nicely browned and flavorful.
  4. Sauté Vegetables: Add the diced red onion, red bell pepper, and minced garlic to the skillet with the sausage. Sauté the mixture until the vegetables soften and become tender, enhancing the overall flavor.
  5. Cook Shrimp and Season: Add the peeled and deveined shrimp to the skillet along with the Cajun seasoning. Cook for 3-4 minutes until the shrimp turn pink and are fully cooked. Season with salt and pepper to taste.
  6. Cool Filling: Remove the skillet from heat and allow the shrimp and sausage mixture to cool slightly, making it easier to handle when stuffing the cabbage leaves.
  7. Assemble Rolls: Place a generous spoonful of the shrimp and sausage filling onto each blanched cabbage leaf. Roll the leaf tightly around the filling, tucking in the sides to secure the mixture inside.
  8. Bake the Rolls: Arrange all stuffed cabbage rolls seam-side down in a baking dish. Bake in the preheated oven for 15-20 minutes until the rolls are heated through and flavors meld.
  9. Garnish and Serve: Optionally garnish the baked stuffed cabbage rolls with fresh parsley. Serve hot for a delicious keto-friendly meal.

Notes

  • Blanching the cabbage leaves makes them pliable and easier to roll without tearing.
  • Adjust the Cajun seasoning quantity based on your spice preference for milder or spicier flavor.
  • This dish reheats well and is excellent for meal prepping ahead of time.
  • Using smoked sausage adds a smoky depth but you can substitute with other sausages as preferred.
