Ingredients

Main Ingredients

  • 1 tablespoon coconut oil
  • 1 tablespoon raw ginger, grated
  • 2 cloves garlic, crushed
  • 1 lb shrimp, peeled and deveined
  • 1 cup coconut milk
  • 3 cups cooked spaghetti squash
  • 6 basil leaves, minced
  • 1 tablespoon lime juice
  • Salt and black pepper to taste

Instructions

  1. Heat the Pan: Heat a large sauté pan over medium heat. Add the coconut oil and allow it to melt completely.
  2. Sauté Aromatics: Add the crushed garlic and grated ginger to the melted coconut oil. Stir and cook for about one minute until fragrant, releasing their aromatic flavors.
  3. Cook Shrimp: Add the shrimp to the pan and sauté for about one minute, coating them thoroughly with the coconut oil and spices.
  4. Add Coconut Milk: Pour in the coconut milk. Stir gently and cook until the shrimp just start to turn pink, about 2-3 minutes, being careful not to overcook.
  5. Combine Spaghetti Squash & Basil: Add the cooked spaghetti squash and half of the minced basil to the pan. Mix well and continue cooking until the shrimp are fully cooked through and heated evenly.
  6. Finish with Lime and Basil: Remove from heat, then toss the dish with fresh lime juice and the remaining basil leaves for a bright, fresh finish.
  7. Serve: Serve immediately. Optionally, garnish with extra lime wedges for an added citrus kick.
