Delicious and low-carb Keto Philly Cheesesteak Roll-Ups featuring savory ground beef, sautéed peppers and onions, and melted Monterey Jack cheese wrapped into crispy, cheesy rolls. Perfect for a quick keto-friendly meal or snack.

Ingredients

Cheese Circles

  • 2 cups Monterey Jack cheese (shredded)

Filling

  • 16 ounces ground beef
  • 1/2 medium onion (sliced)
  • 1 bell pepper (sliced)
  • 1 tsp Worcestershire sauce
  • 4 ounces cream cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the Oven: Preheat your oven to 350 degrees Fahrenheit to prepare for baking the cheese circles.
  2. Cook the Beef and Veggies: In a skillet over medium-high heat, sauté the ground beef along with the sliced onion and bell pepper. Cook until the meat is browned and the vegetables are tender but still have a slight crunch.
  3. Drain Excess Grease: After cooking, carefully drain any excess grease from the skillet to avoid a greasy filling.
  4. Mix in Cream Cheese: Add the Worcestershire sauce and cream cheese to the beef and veggie mixture. Season with salt and pepper. Stir the mixture until it is well combined and the cream cheese has melted into a creamy filling.
  5. Prepare Cheese Circles: On a baking sheet lined with parchment paper, place the shredded Monterey Jack cheese in 8 evenly sized circles, ensuring they are spaced apart to melt evenly.
  6. Bake the Cheese: Bake the cheese circles in the preheated oven for 8 to 10 minutes, or until the edges become browned and develop a lacy texture.
  7. Assemble the Roll-Ups: Let the cheese circles cool slightly until pliable. Then, spoon some of the beef and vegetable mixture onto each circle and carefully roll them up into tight roll-ups.
  8. Let It Set: Allow the roll-ups to cool completely so they firm up and hold their shape before serving.

Notes

  • Try substituting Monterey Jack with Gouda or provolone cheese for a different flavor.
  • Watch the cheese carefully when baking as oven temperatures may vary; remove once edges are browned lace-like.
  • Do not overcook vegetables; they should be tender but retain a slight crunch for texture.
  • Store leftovers in an airtight container in the fridge up to 3 days or freeze for up to 3 months.
  • To reheat, thaw if frozen and warm in the oven or microwave until heated through.
