Delightfully soft and chewy Key Lime Cookies flavored with fresh key lime zest and topped with a tangy key lime glaze. These cookies offer a perfect balance of sweet and tart, ideal for a refreshing treat any time of year.

Ingredients

Cookies:

  • ½ cup unsalted butter (113g), softened to room temperature
  • 1 large egg, room temperature
  • ¾ cup sugar (150g)
  • ¼ cup light brown sugar (50g)
  • 1 tsp vanilla extract
  • 2-3 tsp key lime zest
  • 1 ¾ cup flour (219g)
  • ½ tsp baking soda
  • ½ tsp salt

Key Lime Glaze:

  • 1 cup powdered sugar
  • 1 Tbsp key lime juice
  • 1-2 Tbsp milk
  • ¼ tsp vanilla extract
  • ½ tsp key lime zest
  • Pinch of salt (optional)

Instructions

  1. Prepare Dry Ingredients: In a small bowl, whisk together flour, baking soda, and salt. Set aside for later use.
  2. Cream Butter and Sugars: In a larger mixing bowl, combine softened butter, light brown sugar, and granulated sugar. Beat on high speed with an electric mixer for 1-2 minutes until the mixture is light and fluffy.
  3. Add Egg and Flavorings: Add the egg and vanilla extract to the creamed butter mixture, beating until fully incorporated. Then, mix in the key lime zest.
  4. Combine Dry and Wet Ingredients: Gradually add the dry ingredient mixture to the wet ingredients in thirds, beating only until just combined after each addition to form a cohesive dough.
  5. Shape Cookies: Roll the dough into smooth 1½-inch balls for a uniform and attractive appearance, and place them spaced on a parchment-lined baking sheet.
  6. Bake: Preheat the oven to 350°F (175°C) and bake the cookies for 8-10 minutes. Remove from oven when the edges are set but centers may still appear slightly puffy to achieve a soft, chewy texture.
  7. Cool: Let the cookies cool on the baking sheet for 2-3 minutes, then transfer them to a wire rack to cool completely.
  8. Prepare Glaze: While the cookies cool, whisk together powdered sugar, key lime juice, milk, vanilla extract, key lime zest, and a pinch of salt until smooth. Adjust milk or powdered sugar to reach your desired glaze consistency.
  9. Glaze Cookies: Once the cookies are fully cooled, either dip them into the glaze or spread the glaze over the tops with a knife.
  10. Set and Store: Allow the glaze to set completely. Store leftover cookies in an airtight container for 4-5 days to maintain freshness.

Notes

  • When doubling or tripling the recipe, be sure to multiply ingredient quantities accordingly as gram measurements are provided for a single batch.
  • Use softened butter—not melted or overly hard—as it greatly affects the texture, giving these cookies their soft and chewy quality.
  • Do not overbake; remove cookies from the oven slightly before they look fully set to keep them tender.
  • Rolling dough into smooth balls instead of using a cookie scoop enhances the cookies’ appearance, though this is a personal preference.
