This vibrant Lemon Pizza recipe offers a delightful twist on traditional pizza with a refreshing lemon-infused cheese blend atop a crispy golden crust. Using easy no-knead dough and a tangy lemon brine, this pizza combines fresh mozzarella, parmesan, and zesty lemon flavors for a bright, savory experience perfect for a light lunch or an elegant snack.

Ingredients

Pizza Dough

  • 1 ball Easy pizza dough (or store-bought dough)

Lemon Brine

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon water
  • 1 tablespoon fresh parsley, chopped
  • 1 small garlic clove, grated
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • ¼ teaspoon fine salt
  • ¼ teaspoon black pepper

Toppings

  • 5 oz (150 grams) fresh mozzarella (or ½ to ⅓ cup shredded firm mozzarella)
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons grated parmesan cheese
  • 1 tablespoon fresh parsley, chopped
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare Pizza Dough: Follow your easy no-knead pizza dough recipe through step 5, which includes shaping the dough and preheating your oven. This ensures the dough is ready for topping and baking.
  2. Prepare Cheese: If using fresh mozzarella in water, cut it into ½ inch thick slices. If it feels watery, gently dab with paper towels to remove excess moisture to prevent a soggy pizza.
  3. Shape the Dough: Place the dough onto a sheet of parchment paper. Starting from the center, gently press it outward with your fingers until it measures approximately 9×13 inches. Then, transfer the dough carefully onto a pizza peel or the back of a rimmed baking sheet for easy transfer.
  4. Make the Lemon Brine: Combine olive oil, water, chopped parsley, grated garlic, lemon zest, lemon juice, salt, and black pepper in a glass jar with a lid. Shake vigorously until well emulsified, creating a flavorful lemon dressing for the pizza.
  5. Add Toppings: With the dough shaped, use your fingers to make small dimples across the surface. Scatter the lemon brine evenly over the dough, making sure to fill the dimples. Arrange the mozzarella slices evenly atop the dough.
  6. Bake the Pizza: Use the pizza peel to transfer the pizza with parchment paper onto the preheated pizza stone inside the oven. Bake until the crust is golden and the cheese is melted and nicely browned, approximately 8-10 minutes in a fan-forced oven. Oven times may vary, so monitor closely.
  7. Finish and Serve: Once baked, drizzle the fresh lemon juice over the pizza. Sprinkle grated parmesan cheese, chopped fresh parsley, and freshly ground black pepper to taste. Optionally, add chili flakes for a spicy kick. Slice and serve immediately for best flavor and texture.

Notes

  • Using fresh mozzarella with excess water drained helps avoid a soggy crust.
  • Adjust lemon juice and zest amounts to taste for more or less tanginess.
  • If you don’t have a pizza stone, bake the pizza on a preheated baking sheet for similar results.
  • The recipe relies on a no-knead dough for ease but can be substituted with store-bought dough.
  • Watch baking time carefully as ovens vary; the pizza is done when crust is golden and cheese browned.
