Lemon Ricotta Cake

  • 4 large eggs (two whole eggs, two egg whites, room temperature)
  • 1½ cups granulated sugar (300g)
  • 3-4 tablespoons lemon zest or peeled lemons
  • ¼ cup vegetable oil (60ml)
  • ¼ cup unsalted butter, melted (57g)
  • ¼ cup lemon juice, freshly squeezed (60ml)
  • 2 teaspoons vanilla paste or extract
  • ¾ cup ricotta cheese (full-fat, room temperature) (180g)
  • 1 cup whole milk (240ml)

Blueberry Glaze

  • 1 cup blueberries, fresh or frozen (115g fresh)
  • 1½ cups powdered sugar, sifted (180g)
  • 1-2 tablespoons water, milk, or heavy cream

Instructions

  1. Preheat Oven and Prepare Pan: Preheat the oven to 350℉ (180℃). Grease and flour a bundt pan thoroughly to ensure the cake releases easily after baking.
  2. Mix Dry Ingredients: In a bowl, whisk together the all-purpose flour, baking powder, baking soda, and kosher salt. Set aside for later use in the batter.
  3. Prepare Lemon Sugar: Peel 1½ lemons and add the peels to a food processor with granulated sugar. Blend until no chunks remain. Alternatively, zest 3-4 tablespoons of lemon zest using a microplane and mix it into the sugar with your fingertips for an aromatic touch.
  4. Beat Eggs: Separate two of the eggs, reserving the yolks for another use. Combine the eggs and egg whites in the bowl of a stand mixer and beat on medium-high speed for about 3 minutes until the mixture becomes foamy and fluffy.
