Pasta

  • 10.5 oz dry spaghetti (300 grams)

Zucchini Sauce

  • 1.5 lbs zucchini (680 grams), diced
  • 3 tablespoons olive oil
  • 3 cloves garlic, finely diced
  • Zest of ½ lemon
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons lemon juice (from about ½ lemon)
  • ½ cup shaved Parmesan cheese or Pecorino, or nutritional yeast
  • ⅓ cup reserved pasta water
  • A few basil leaves
  • Chili flakes, for serving
  • Extra Parmesan, for serving

Instructions

  1. Cook the pasta: Bring a large pot of well-salted water to a boil. Add the spaghetti and cook until al dente according to package instructions. Before draining, reserve about ½ cup of the pasta water. Drain the pasta and set aside.
  2. Start browning zucchini: While the pasta cooks, heat 2 tablespoons of olive oil in a large sauté pan over high heat. Add the diced zucchini and cook undisturbed for 1 minute to let it start browning on one side.
  3. Continue cooking zucchini: Add the remaining tablespoon of olive oil and cook for 2 more minutes, stirring occasionally to brown multiple sides of the zucchini pieces evenly.
  4. Caramelize zucchini with aromatics: Lower the heat to medium. Add the finely diced garlic, lemon zest, salt, and black pepper to the pan. Stir to combine all ingredients, then cover the pan with a lid. Let the zucchini cook for about 7 minutes, stirring once or twice, until it becomes soft and caramelized, releasing natural sweetness and developing rich flavor.
  5. Combine pasta and sauce: Pour 1.5 to 2 tablespoons of fresh lemon juice into the zucchini mixture and stir. Add the cooked spaghetti, shaved Parmesan cheese, and about ⅓ cup of reserved pasta water to the pan. Toss everything well to create a creamy, saucy coating around the pasta and zucchini.
  6. Serve: Plate the pasta and garnish with fresh basil leaves, a sprinkle of chili flakes, and extra Parmesan cheese. Optionally drizzle a little good-quality olive oil on top before serving for added richness.
