Optional lime glaze adds a tangy sweetness that complements the zesty cookie base beautifully.

Ingredients

Cookie Dough

  • ½ cup butter, softened
  • 1 cup sugar, plus extra for coating
  • ¼ tsp baking soda
  • ¼ tsp cream of tartar
  • ¼ tsp salt
  • 1 egg
  • ½ tsp vanilla extract
  • Zest of 1 lime
  • Juice of 1 lime
  • 1-2 drops green food coloring (optional)
  • 1 ½ cups all-purpose flour

Glaze (Optional)

  • 1 tbsp butter, melted
  • Juice of 1 lime
  • ¼ to ⅓ cup powdered sugar

Instructions

  1. Cream Butter and Sugar: In a mixing bowl, use an electric mixer to cream together the softened butter and sugar for 2-3 minutes until light and fluffy.
  2. Add Leavening Agents and Salt: Mix in the baking soda, cream of tartar, and salt until well combined.
  3. Incorporate Egg and Vanilla: Add the egg and vanilla extract to the mixture and beat until fully blended.
  4. Add Lime Zest and Juice: Zest the lime and add the zest to the dough. Then squeeze the juice from the lime and add it as well, mixing thoroughly.
  5. Add Flour and Food Coloring: Gradually mix in the flour and optional green food coloring until the dough comes together evenly.
  6. Chill the Dough: Place the dough into an airtight container and chill in the refrigerator for 2 hours to firm up.
  7. Form Cookies: Scoop tablespoon-sized portions of dough and roll each into a ball. Roll each ball in sugar until fully coated.
  8. Bake the Cookies: Arrange the sugar-coated dough balls on a cookie sheet, spacing them apart. Bake in a preheated oven at 375°F (190°C) for 8-10 minutes until edges are lightly golden.
  9. Prepare the Glaze: While the cookies bake, mix melted butter and lime juice in a bowl. Gradually add powdered sugar, stirring until desired glaze consistency is achieved.
  10. Glaze and Serve: If desired, brush or drizzle the glaze over the warm cookies. Let cool slightly before serving. Enjoy your bright, citrusy lime sugar cookies!

Notes

  • Food coloring is optional; adding green tint visually hints at the lime flavor, but cookies are delicious without it.
  • Chilling the dough for 2 hours helps prevent spreading and improves cookie texture.
  • The glaze has a strong lime flavor, so use sparingly to complement rather than overpower the cookies.
  • Store cookies in an airtight container at room temperature for up to 4 days.
