Ingredients

For the Earl Grey Cookies

  • 3 tbsp (12 g) Earl Grey tea
  • 2 3/4 cups (344 g) all purpose flour, spooned and leveled
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup (200 g) granulated white sugar
  • 1 cup (227 g) unsalted butter, softened
  • 1 egg, at room temperature
  • 2 tsp vanilla bean paste

For the Lavender Sugar

  • 1/2 cup (100 g) granulated white sugar
  • 1/2 tbsp culinary lavender

For the Lavender Cream Cheese Frosting

  • 4 oz (113 g) cream cheese
  • 1/4 cup (56 g) unsalted butter, softened
  • 1 cup (130 g) powdered sugar
  • 1/2 tbsp culinary lavender (finely ground, reserved from lavender sugar)
  • 1 tsp vanilla bean paste
  • Purple food coloring (optional)

Instructions

  1. Prepare Lavender Sugar: Add the culinary lavender to a food processor and pulse until finely ground, then pass through a sieve to remove large bits. Set aside half the ground lavender for the frosting. Mix the remaining lavender with granulated sugar in a bowl and set aside for rolling the cookies.
  2. Preheat and Prepare Baking Sheets: Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
  3. Process Earl Grey Tea: Place the Earl Grey tea in a food processor and pulse until finely ground. Pass through a sieve to remove larger bits.
  4. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and ground Earl Grey tea. Set aside.
  5. Cream Butter and Sugar: In a large bowl, combine granulated sugar and softened butter. Using an electric mixer on high speed, cream for 1-2 minutes until the mixture is very light and fluffy.
  6. Add Egg and Vanilla: Add the room temperature egg and vanilla bean paste. Mix on medium speed for 1-2 minutes until pale and fluffy.
  7. Combine Dry and Wet Ingredients: Add the dry ingredient mixture to the wet ingredients. Mix on low speed just until combined to form the cookie dough.
  8. Shape and Coat Cookies: Using a 2 tbsp cookie scoop, portion the dough and roll into balls. Roll each dough ball in the prepared lavender sugar to coat them evenly.
  9. Arrange on Baking Sheet: Place the dough balls at least 2 inches apart on the prepared baking sheets. Slightly flatten each ball into a circle with your hand or the bottom of a glass, aiming for a uniform shape.
  10. Bake: Bake 6-8 cookies at a time in the preheated oven for 9-10 minutes. After baking, let cookies cool on the baking sheet for 5 minutes. While still warm, use a large circular cookie cutter to gently trim each cookie into a perfect circle shape.
  11. Cool Completely: Transfer the cookies to a wire rack to cool completely before frosting.
  12. Make Lavender Cream Cheese Frosting: While cookies bake and cool, prepare the frosting. In a medium bowl, beat softened butter and cream cheese together with an electric mixer until fluffy, about 3-4 minutes. Gradually add powdered sugar, the reserved finely ground lavender, and vanilla bean paste. Continue mixing until very fluffy. Add purple food coloring if desired to enhance the lavender hue.
  13. Frost Cookies: Once cookies are fully cooled, spread about 1 tablespoon of frosting onto each cookie using a mini offset spatula, smoothing evenly.
  14. Serve and Enjoy: Allow the frosting to set slightly if desired, then enjoy these fragrant, elegant London Fog Cookies.

Notes

  • For best texture, spoon and level the flour rather than scooping directly from the bag to avoid packing.
  • Rolling the cookie dough balls in lavender sugar adds an aromatic floral crunch that complements the Earl Grey flavor.
  • The circular cookie cutter step ensures uniform shape but is optional.
  • Room temperature egg and softened butter are key for proper creaming and structure.
  • Finely ground lavender is critical to avoid unwanted texture in both sugar and frosting.
  • Use quality Earl Grey tea with bergamot flavor to achieve authentic flavor.
  • Purple food coloring is optional and used purely for visual appeal.
