This Luscious Lemon Cheesecake Smoothie is a decadent, banana-free treat that tastes just like lemon cheesecake in a thick, delicious, healthy liquid form. Made with fresh lemon, coconut milk, chickpeas, dates, pecans, mango, and a hint of turmeric and apple cider vinegar, it offers a rich, dessert-inspired flavor perfect for a nutritious snack or breakfast.

Ingredients

Fruits & Zest

  • 1 medium lemon
  • 1 cup (150 grams) frozen mango pieces
  • 1 to 2 medjool dates

Liquids & Sweeteners

  • 1 cup (240 mls) light canned coconut milk
  • ½ teaspoon apple cider vinegar
  • 1 tablespoon maple syrup (optional for extra sweetness)

Other Ingredients

  • ¼ heaping cup (50 grams) chickpeas, canned or homecooked
  • ¼ cup (25 grams) chopped pecan nuts
  • ¼ teaspoon ground turmeric
  • ⅛ teaspoon fine sea salt

Instructions

  1. Zest the lemon: Begin by zesting the lemon carefully, making sure to only get the yellow skin. Add the zest directly into your blender to start building the smoothie’s bright, citrus base.
  2. Prepare the lemon flesh: Cut off both pointy ends of the lemon, then stand it upright and slice down the sides to remove all the white pith and peel, leaving only the juicy lemon flesh. Add the peeled lemon pieces to the blender, discarding the pith and peel.
  3. Add remaining ingredients: Place the light canned coconut milk, chickpeas, medjool dates, chopped pecans, frozen mango pieces, ground turmeric, sea salt, and apple cider vinegar into the blender. Blend everything on high until completely smooth. The smoothie will be thick; if you prefer it thinner, add a little more coconut milk or a splash of water and blend again.
  4. Adjust sweetness and serve: Taste the smoothie and if you want an extra touch of sweetness, add the optional maple syrup. Blend on low briefly to combine. Pour into a glass and enjoy your luscious lemon cheesecake smoothie immediately.

Notes

  • Use fresh lemon for the best citrus flavor and natural brightness.
  • Adjust the number of dates and maple syrup to control sweetness.
  • Chickpeas add protein and a creamy texture, making the smoothie filling and nutritious.
  • Frozen mangoes help thicken the smoothie and add tropical sweetness.
  • You can substitute pecans for other nuts like almonds or walnuts if desired.
  • Add a little water or extra coconut milk to thin the smoothie if it’s too thick.
  • This smoothie is best enjoyed fresh but can be stored in the refrigerator for up to 24 hours; stir well before drinking.
