These Magic Cookie Bars with a Tropical Twist combine a buttery Oreo crust with layers of white chocolate chips, dried pineapple, toasted coconut, and macadamia nuts. Sweetened condensed milk binds the tropical ingredients together, creating a rich, chewy, and delightfully tropical dessert bar that’s perfect for any occasion.

Ingredients

Crust

  • 24 Golden Oreos or vanilla sandwich cookies (regular or gluten-free)
  • 4 tablespoons unsalted butter, melted

Filling and Topping

  • 1 1/2 cups vanilla white chocolate chips
  • 6 ounce package dried pineapple, chopped
  • 1 cup sweetened flaked coconut
  • 4 ounces dry roasted macadamia nuts, chopped or processed into crumbs
  • 14 ounce can sweetened condensed milk

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 325°F (163°C). Line an 8-inch square baking pan with foil or parchment paper, ensuring the shiny side of foil is down or the paper is sprayed with non-stick spray. Leave an overhang on the sides for easy removal of the bars.
  2. Make the Crust: Combine the Golden Oreos and melted butter in a food processor and blend until the mixture resembles wet sand with fine crumbs. Press this mixture evenly into the bottom of the prepared baking pan.
  3. Bake the Crust: Bake the crust in the preheated oven at 325°F for 10 minutes, then remove from oven and allow it to cool slightly.
  4. Prepare Toppings: While the crust is baking, chop the dried pineapple into small pieces. Process the dry roasted macadamia nuts in a food processor until they form small crumbs.
  5. Increase Oven Temperature: After removing the crust from the oven, increase the oven temperature to 350°F (177°C) in preparation for baking the assembled bars.
  6. Assemble Bars: Sprinkle the white chocolate chips evenly over the warm crust. Then layer the chopped dried pineapple, sweetened flaked coconut, and macadamia nut crumbs evenly on top.
  7. Add Condensed Milk: Pour the entire 14-ounce can of sweetened condensed milk evenly over the layered ingredients to bind them together.
  8. Bake the Bars: Place the pan in the oven preheated to 350°F and bake for approximately 25 to 30 minutes or until the top is golden brown and bubbly.
  9. Cool and Serve: Allow the bars to cool completely in the pan on a wire rack. Once cooled, use the foil or parchment overhang to lift the bars out of the pan and cut into squares for serving.

Notes

  • Using Golden Oreos provides a buttery vanilla flavor that pairs well with tropical ingredients; gluten-free Oreos work for gluten-sensitive diets.
  • Chilling the bars after baking ensures clean slicing and helps the bars hold together.
  • For extra crunch, lightly toast the coconut before adding it to the bars.
  • Store bars in an airtight container at room temperature for up to 3 days or refrigerate to extend freshness.
