Delight in these tangy and sweet Mango Bars featuring a buttery crumbly crust topped with a luscious fresh mango filling. Bursting with tropical flavors and a hint of lemon, these bars are perfect for a refreshing dessert or snack.

Ingredients

Crust:

  • 3/4 cup unsalted butter, diced
  • 2 cups flour
  • 3/4 cup sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Filling:

  • 3 cups fresh mango, diced finely
  • 1 tablespoon cornstarch
  • 1/2 cup sugar
  • 2 tablespoons lemon juice
  • 1 cup mango preserves (mixed mango flavor okay too)

Instructions

  1. Preheat Oven and Prepare Pan: Preheat the oven to 375°F (190°C) and spray a 9×13-inch baking pan with baking spray to ensure the bars don’t stick.
  2. Make the Crust Mixture: In a food processor, combine the diced unsalted butter, flour, sugar, baking powder, and salt. Pulse until the mixture resembles pea-sized crumbs, creating a crumbly dough texture.
  3. Press Crust Into Pan: Press about three-quarters of this crumb mixture firmly into the bottom of the prepared baking pan, forming an even base layer.
  4. Bake Crust: Bake the crust in the preheated oven for 18-20 minutes, or until it is just barely beginning to brown around the edges.
  5. Prepare Mango Filling: In a mixing bowl, combine the finely diced fresh mango, cornstarch, sugar, lemon juice, and mango preserves. Stir well until thoroughly mixed to form the mango filling.
  6. Assemble Bars: Evenly spread the mango filling over the baked crust layer in the pan. Crumble the remaining crust mixture evenly over the top of the mango filling to create a crumb topping.
  7. Bake the Mango Bars: Return the assembled pan to the oven and bake for an additional 20-25 minutes, or until the topping is golden brown and the filling is set.
  8. Cool and Serve: Remove the bars from the oven and allow them to cool completely in the pan before cutting into squares to serve.

Notes

  • Use ripe, fresh mangoes for the best flavor and sweetness in the filling.
  • Ensure to cool the bars fully before cutting to avoid the filling from being too runny.
  • The crust can be made by hand if a food processor is not available by cutting the butter into the dry ingredients until crumbly.
  • Mango preserves can be substituted with other stone fruit jams if desired.
  • Store leftover bars in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
