A refreshing and creamy mango coconut overnight oats recipe combining the natural sweetness of fresh mangoes with rich coconut milk and nutritious chia seeds. Perfect for a quick and healthy breakfast that’s ready to eat in the morning after an overnight soak.

Ingredients

Overnight Oats Mixture

  • 1 1/2 Cups Coconut Milk
  • 1 Cup Quick Rolled Oats
  • 1/4 Cup Unsweetened Greek Yogurt
  • 2 Tablespoons Chia Seeds
  • 2 Tablespoons Unsweetened Shredded Coconut
  • 2 Tablespoons Pure Honey
  • 1/2 teaspoon Vanilla Extract
  • Pinch of Salt (about 1/8 teaspoon)

Mango

  • 2 Cups Fresh Mango, cubed

Instructions

  1. Combine the mixture: In a medium-sized bowl, whisk together the coconut milk, rolled oats, unsweetened Greek yogurt, chia seeds, shredded coconut, honey, vanilla extract, and a pinch of salt until all ingredients are well incorporated.
  2. Layer the jars: Prepare two pint-sized mason jars or similar containers. Begin by placing about 1/3 cup of cubed fresh mango at the bottom of each jar, then add 1/2 cup of the overnight oats mixture on top of the mango layer.
  3. Repeat layering: Add another layer of cubed mango on top of the oats in each jar, followed by another 1/2 cup of the oats mixture, creating alternating layers.
  4. Top with mango: Finish by placing the remaining mango cubes on top of each jar to add a fresh and vibrant touch.
  5. Refrigerate overnight: Seal the jars with lids and place them in the refrigerator. Let the oats soak overnight, or for at least 6-8 hours, to allow the oats and chia seeds to absorb the liquids and soften.
  6. Serve chilled: In the morning, grab a jar and enjoy the chilled, creamy mango coconut overnight oats as a nutritious breakfast. Optionally, add extra toppings such as more yogurt, coconut whip, honey, puffed millet cereal, or chia seeds if desired.

  • To make this recipe vegan-friendly, substitute the Greek yogurt with a dairy-free yogurt alternative and replace honey with pure maple syrup or agave nectar.
  • This recipe is ideal for meal prep and can be stored safely in the refrigerator for up to 3 days.
