Mango Tiramisu is a refreshing twist on the classic Italian dessert, combining the creamy richness of mascarpone cheese with the tropical sweetness of fresh mangoes and mango jam. Ladyfingers soaked lightly in mango juice create a delicate base that pairs perfectly with the airy mascarpone cream, finished with colorful pistachio garnish. Ingredients

For the Ladyfingers Layer

  • 14oz (400g) ladyfingers (about 40)
  • Mango juice (enough to lightly dip ladyfingers)
  • 2-3 fresh mangoes, diced
  • Mango jam (for drizzling)

For the Cream

  • 2 pounds mascarpone cheese
  • 1 to 1 and 1/2 cups confectioner’s sugar
  • 2 and 1/2 cups heavy whipping cream
  • 2-3 teaspoons pure vanilla extract

For the Garnish

  • Ground pistachios
  • Diced mangoes

Instructions

  1. Make the Cream: Combine mascarpone cheese, confectioner’s sugar, heavy whipping cream, and pure vanilla extract in a mixing bowl. Whisk starting at low speed and gradually increase to high until the mixture becomes thick and fluffy, forming a smooth, creamy texture.
  2. Soak the Ladyfingers: Pour mango juice into a shallow bowl or baking dish. Dip each ladyfinger quickly, about 2-3 seconds per side, just until coated but not saturated, to avoid sogginess and maintain texture.
  3. Layer Ladyfingers: Arrange the soaked ladyfingers evenly across the bottom of a 9 by 13-inch baking dish. For individual servings, use cups or trifle bowls instead.
  4. Add Cream and Mango: Spread one third of the prepared mascarpone cream over the ladyfingers. Drizzle mango jam on top, then sprinkle evenly with diced fresh mangoes to add bursts of tropical flavor.
  5. Repeat Layers: Add another layer of soaked ladyfingers and cover with a thin coating of the mascarpone cream.
  6. Decorate the Top: Fill a large pastry bag fitted with a large open star tip with the remaining mascarpone cream. Pipe decorative rosettes or designs over the top layer for an elegant finish.
  7. Garnish: Sprinkle ground pistachios and add a few diced mango pieces on top to enhance the visual appeal and add a subtle nutty crunch.
  8. Chill: Refrigerate the assembled mango tiramisu overnight, or for at least 6 hours, to allow the flavors to meld and the dessert to set properly.
