Ingredients

Maple BBQ Cauliflower

  • 1 large head of cauliflower, stem removed and cut into florets
  • ⅔ cup (105g) white rice flour or brown rice flour
  • ½ cup (125g) water
  • 1 tablespoon smoked paprika
  • 1 teaspoon oregano
  • 1 teaspoon cumin powder
  • 1 teaspoon garlic powder
  • ½ cup (120g) barbeque sauce, of choice
  • 2 tablespoons (40g) maple syrup, to taste

Butter Bean Spread

  • ~1 ½ cup (400g) butter beans
  • 1 small lemon, zest and juice
  • Handful of fresh or dried herbs of choice, such as oregano, rosemary

Wraps and Vegetables

  • 5 wraps, of choice
  • 1 medium bell pepper / capsicum, deseeded and sliced thinly
  • ½ cup (20g) red cabbage, sliced thinly
  • 1 small cucumber, sliced thinly
  • 1 cup (15g) salad leaves

Instructions

  1. Prepare the Cauliflower Batter: Preheat the oven to 180°C (350°F) and line a baking tray with baking paper. In a medium bowl, whisk together the rice flour, water, smoked paprika, oregano, cumin powder, and garlic powder until smooth and fully combined.
  2. Batter and Bake Cauliflower: Dip each cauliflower floret into the batter ensuring all sides are coated, then shake off excess batter. Arrange the coated florets evenly on the prepared baking tray. Bake in the preheated oven for 20 minutes or until the cauliflower is tender.
  3. Prepare Maple BBQ Sauce and Coat Cauliflower: In another bowl, mix the barbecue sauce with the maple syrup until combined. Toss the partially baked cauliflower florets in the sauce to coat thoroughly. Return them to the baking tray in a single layer and bake for an additional 10 minutes or until the florets turn golden and slightly caramelized.
  4. Make the Butter Bean Spread: Add the butter beans, lemon zest, lemon juice, and your chosen fresh or dried herbs to a food processor. Blend until smooth and creamy, scraping down the sides as needed.
  5. Assemble the Wraps: Lay a wrap flat on a clean surface. Spread a generous layer of butter bean spread on one side. Top with the maple BBQ cauliflower florets, sliced bell pepper, red cabbage, cucumber, and salad leaves. Fold the sides over to form a wrap. Serve immediately or store in an airtight container until ready to eat.
