Ingredients

Turkey Sausage Patties

  • 1 pound 93% lean ground turkey (do not use extra lean)
  • 2 garlic cloves, finely minced
  • 1 tablespoon pure maple syrup
  • 1 tablespoon fresh chopped sage (about 4 medium sage leaves)
  • ½ teaspoon dried thyme
  • ½ teaspoon ground cumin
  • ½ teaspoon ground ginger
  • ¼ teaspoon allspice
  • ¼ teaspoon cayenne pepper
  • ¾ teaspoon salt
  • Freshly ground black pepper, to taste
  • ⅓ cup fresh or frozen blueberries

For Cooking

  • 1 teaspoon coconut oil or olive oil (for cooking)

To Serve

  • Additional maple syrup, for drizzling (optional)
  • Fried eggs (optional, for serving)

Instructions

  1. Mix the ingredients: In a large bowl, combine the ground turkey, minced garlic, maple syrup, chopped sage, dried thyme, ground cumin, ground ginger, allspice, cayenne pepper, salt, and freshly ground black pepper. Use your hands to mix everything together thoroughly until well incorporated.
  2. Add blueberries: Gently fold in the fresh or frozen blueberries, taking care to evenly distribute them without breaking them apart. This ensures juicy bursts in every bite.
  3. Form the patties: Shape the mixture into 8 evenly sized patties, about 1/3 inch thick. Make sure to tuck the blueberries securely within the patties so they do not fall out during cooking.
  4. Heat the skillet: Place 1 teaspoon of coconut oil or olive oil into a nonstick skillet and heat over medium heat until shimmering.
  5. Cook the patties: Add the turkey patties to the hot skillet. Cook for about 5 minutes on the first side, then carefully flip and cook for an additional 4 to 5 minutes or until the patties are fully cooked through and browned on both sides.
  6. Serve: Serve two patties per person alongside fried eggs for a balanced breakfast. Optionally, drizzle a small amount of maple syrup over the patties to enhance their sweetness.

Notes

  • To freeze leftovers, place cooled turkey sausage patties in a freezer-safe container and store for up to 3 months. Reheat thoroughly before serving.
  • Use fresh blueberries if possible for best flavor, but frozen berries work well too—just thaw slightly before mixing in.
  • Adjust cayenne pepper quantity to control the level of heat in the patties.
  • For a dairy-free option, stick with coconut oil or olive oil for cooking.
  • Make sure patties are cooked to an internal temperature of 165°F (74°C) for food safety.
