This Maple-Bourbon Banana Bread is a decadent twist on classic banana bread, featuring rich flavors of bourbon and maple extract combined with overripe bananas and sweet toffee chunks. Moist and flavorful, it’s perfect for a special breakfast or an indulgent snack.

Ingredients

Dry Ingredients

  • 3 ½ cups all-purpose flour, spooned and leveled
  • 2 teaspoons baking soda
  • 1 ½ teaspoons salt
  • 1 teaspoon cinnamon
  • ½ teaspoon baking powder

Wet Ingredients

  • 1 cup white sugar
  • 1 cup packed dark brown sugar
  • 4 eggs, room temperature
  • 1 cup vegetable oil
  • ⅔ cup whole milk
  • ¼ cup bourbon
  • 1 ½ teaspoons maple extract
  • 1 teaspoon vanilla extract
  • 2 cups mashed overripe bananas (about 5-6 bananas)

Mix-In

  • 1 (8-ounce) package chopped toffee

Instructions

  1. Preheat Oven: Heat your oven to 350 degrees Fahrenheit to prepare for baking.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, baking soda, salt, cinnamon, and baking powder until well combined.
  3. Mix Wet Ingredients: In another large bowl, thoroughly whisk the white sugar and dark brown sugar to break up lumps. Then whisk in the eggs one at a time, followed by the vegetable oil, whole milk, bourbon, maple extract, and vanilla extract until the mixture is smooth and homogeneous.
  4. Add Bananas: Stir the mashed bananas into the wet mixture, ensuring they are evenly incorporated throughout.
  5. Combine Mixtures: Gradually add spoonfuls of the dry flour mixture into the wet mixture, stirring gently after each addition until just combined. Avoid overmixing to keep the bread tender.
  6. Add Toffee: Fold in the chopped toffee evenly throughout the batter to add a pleasant crunch and sweetness.
  7. Prepare Pans: Lightly coat two 8 ½-inch by 4 ½-inch loaf pans or eight 5 ½-inch by 3-inch mini loaf pans with cooking spray to prevent sticking. Alternatively, use one large loaf pan and five mini pans as desired.
  8. Pour Batter and Bake: Pour the batter into the prepared pans, leaving about an inch of space at the top for the bread to rise. Bake mini loaves for 40-45 minutes and the large loaf for 55-60 minutes, or until a toothpick inserted into the center comes out clean. If baking different pan sizes simultaneously, remove mini loaves when ready and continue baking the large loaf.
  9. Cool and Serve: Allow the bread to cool in the pans for 10-15 minutes before transferring to a wire rack. Once completely cool, cover tightly with plastic wrap to keep fresh. Slice and enjoy your flavorful maple-bourbon banana bread!

Notes

  • Use very ripe bananas for the best sweetness and moistness.
  • Adjust bourbon quantity to taste or substitute with vanilla extract for no alcohol.
  • Maple extract boosts flavor, but you can replace it with pure maple syrup if preferred.
  • Ensure to mix gently after adding flour to avoid tough bread texture.
  • Store any leftovers tightly wrapped at room temperature for up to 3 days or freeze for longer storage.
