Ingredients

Butter Beans

  • 2 (15 oz.) cans butter beans, drained and rinsed
  • 2 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • ½ cup organic sundried tomatoes
  • 1 tablespoon organic tomato paste
  • 2 tablespoons Tuscan Marry Me blend (or homemade blend, see notes)
  • 1 teaspoon sea salt
  • 1 cup organic heavy cream
  • ½ cup organic vegetable stock
  • 3 tablespoons white cooking wine (optional, can substitute with extra vegetable stock)
  • ½ lemon, freshly squeezed
  • 1 cup chopped kale, organic
  • ½ cup freshly grated Parmesan cheese, plus more for garnish

Instructions

  1. Melt Butter and Sauté Garlic: In a medium skillet, melt the unsalted butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.
  2. Add Seasonings and Tomatoes: Stir in the Tuscan Marry Me blend and sea salt, combining well. Add the sundried tomatoes and tomato paste, stirring until the mixture is well incorporated.
  3. Incorporate Cream and Liquids: Reduce heat to medium-low. Gradually add the heavy cream, vegetable stock, freshly squeezed lemon juice, and white cooking wine, stirring continuously to combine. Allow mixture to gently bubble for 1-2 minutes.
  4. Thicken Sauce with Parmesan: Add the grated Parmesan cheese and whisk constantly until the cheese fully melts and the sauce thickens, about 2-3 minutes.
  5. Add Kale and Butter Beans: Stir the chopped kale into the sauce until evenly distributed. Then fold in the drained butter beans, allowing everything to simmer together for 5-6 minutes, or until the beans are tender and can be easily slightly mashed.
  6. Finish and Serve: Remove the skillet from heat. Serve the creamy butter beans hot, garnished with extra freshly grated Parmesan. Pair with your favorite sides such as rice, mashed potatoes, vegetables, or garlic bread.

  • You can substitute dry butter beans by soaking them overnight and cooking until tender; adjust the cooking time accordingly.
