Ingredients

Sun-Dried Tomato Cream Sauce

  • 5 oz. sun-dried tomatoes in oil, divided
  • 2 Tbsp. extra-virgin olive oil
  • 3 garlic cloves, minced
  • 1 tsp. kosher salt, divided
  • 1 cup heavy cream
  • 2 Tbsp. finely chopped fresh basil leaves, plus more for serving
  • 2 tsp. finely chopped fresh thyme leaves
  • 1/4 tsp. crushed red pepper flakes
  • 1 oz. Parmesan, finely grated (about 1/2 cup), plus more for sprinkling

Pizza

  • 16 oz. store-bought or homemade pizza dough
  • 2 oz. mozzarella, shredded
  • 4 oz. rotisserie chicken, shredded

Instructions

  1. Preheat Oven and Prepare Tomatoes: Arrange a rack in the lower third of the oven and preheat to 550°F. Finely chop 4 oz. of sun-dried tomatoes. Slice the remaining 1 oz. into bite-sized pieces and set aside for garnishing the finished pizza.
  2. Cook Tomato and Garlic Mixture: Heat the olive oil in a large skillet over medium heat. Add the chopped sun-dried tomatoes and minced garlic. Stir frequently until the garlic softens and the tomatoes start to break down, about 3 minutes. Season with 1/2 teaspoon of kosher salt.
  3. Make the Cream Sauce: Pour in the heavy cream, then add the chopped fresh basil, thyme, and crushed red pepper flakes. Bring to a simmer, lowering the heat to medium-low if the sauce begins to boil. Cook, stirring occasionally, until the sauce thickens and coats the back of a spoon, about 5-6 minutes. Remove from heat and stir in the grated Parmesan until the sauce is smooth. Let it cool slightly.
  4. Prepare the Pizza Base: Stretch the pizza dough into a 12 to 14-inch diameter round shape. Transfer to a round pizza pan or a large baking sheet. Spread the cooled sun-dried tomato cream sauce evenly over the dough, leaving a 1/2 to 1-inch border around the edges. Sprinkle shredded mozzarella evenly over the sauce, then top with shredded rotisserie chicken.
  5. Bake the Pizza: Place the pizza in the preheated oven on the lower rack. Bake until the bottom and edges of the crust are golden brown and crisp, approximately 5 minutes.
  6. Finish and Serve: Remove the pizza from the oven and top with the reserved sun-dried tomato slices, additional fresh basil leaves, and a sprinkle of Parmesan cheese. Slice and serve immediately for the best flavor and texture.

Notes

  • Use a high-temperature oven setting (550°F) to achieve a crispy, golden crust in a short baking time.
  • Substituting rotisserie chicken with leftover cooked chicken is fine for convenience.
  • If you prefer a spicier sauce, increase the crushed red pepper flakes to taste.
  • For a lighter version, use half-and-half instead of heavy cream, though the sauce will be less rich.
  • Fresh herbs like basil and thyme add a bright flavor; dried herbs can be used but reduce quantity to one-third.
