Marry Me Chickpeas is a flavorful, creamy chickpea stew simmered with sun-dried tomatoes, coconut milk, and aromatic herbs. This easy stovetop dish combines savory garlic, Italian seasoning, and fresh basil to create a hearty, satisfying meal perfect for a quick lunch or dinner.

Ingredients

Main Ingredients

  • 2 tablespoons olive oil
  • 2 garlic cloves, crushed
  • ½ tablespoon Italian seasoning
  • ½ teaspoon red chili flakes
  • ¼ teaspoon ground black pepper
  • 2 tablespoons tomato paste
  • ½ cup (30 g) sun-dried tomatoes, sliced
  • 1 teaspoon fresh thyme
  • 2 cans (14 oz / 400 g each) chickpeas, drained and rinsed
  • 1 cup (200 ml) vegetable stock
  • 1 cup (200 ml) coconut milk
  • 6-8 fresh basil leaves, roughly shredded
  • Salt and freshly ground black pepper to taste

Instructions

  1. Heat Olive Oil and Sauté Garlic: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the crushed garlic cloves and sauté them until fragrant, about 1-2 minutes, taking care not to let the garlic burn.
  2. Add Spices: Stir in ½ tablespoon of Italian seasoning, ½ teaspoon of red chili flakes, and ¼ teaspoon of ground black pepper. Cook the mixture for another minute to release the spices’ aromas.
  3. Incorporate Tomato Paste: Add 2 tablespoons of tomato paste to the skillet and stir well to combine it with the garlic and spices, allowing the flavors to meld.
  4. Add Remaining Ingredients and Simmer: Stir in ½ cup (30 g) sliced sun-dried tomatoes, 1 teaspoon fresh thyme, 2 cans of drained and rinsed chickpeas, and 1 cup (200 ml) vegetable stock. Bring the mixture to a simmer, then cover with a lid and let it simmer gently for 5 minutes.
  5. Finish with Coconut Milk and Basil: Stir in 1 cup (200 ml) coconut milk and allow to simmer for an additional minute. Add 6-8 roughly shredded fresh basil leaves and stir them through.
  6. Season and Serve: Taste the chickpea stew and season with salt and freshly ground black pepper as desired. Serve immediately while hot.

Notes

  • You can adjust the amount of red chili flakes according to your preferred spice level.
  • Use fresh herbs when possible for best flavor; dried basil can be substituted if fresh is not available.
  • This dish pairs well with crusty bread or over cooked grains like rice or quinoa.
  • For a richer flavor, allow the stew to rest for a few minutes off the heat before serving.
