A sweet and crunchy Marshmallow Popcorn recipe that combines lightly salted popcorn with a buttery, sugary marshmallow coating. Perfect for snacking or sharing at gatherings, this treat is easy to make on the stovetop and can be customized with vanilla, sea salt flakes, or mini M&M’s for added flavor and texture.

Ingredients

Popcorn

  • 13 to 16 cups popcorn, lightly salted (such as SkinnyPop)

Marshmallow Mixture

  • 1 cup butter
  • 16 ounces mini marshmallows
  • ¾ cup light brown sugar, packed
  • ½ teaspoon vanilla extract (optional)

Toppings (Optional)

  • Flake sea salt
  • ½ cup mini M&M’s

Instructions

  1. Add popcorn to bowl: Place 13 to 16 cups of lightly salted popped popcorn into a large mixing bowl to prepare for coating.
  2. Melt butter and marshmallows: In a large pan over medium-low heat, melt 1 cup of butter together with 16 ounces of mini marshmallows, stirring frequently until fully combined and smooth.
  3. Add brown sugar then coat popcorn: Stir ¾ cup packed light brown sugar into the melted butter and marshmallow mixture. Continue stirring for about 1 minute until the sugar dissolves completely. Remove from heat, add ½ teaspoon vanilla extract if using, and let the mixture sit for one minute. Pour the hot mixture evenly over the bowl of popcorn and stir well to ensure all popcorn is thoroughly coated. Add more popcorn to your liking for desired texture.
  4. Spread on wax paper: Transfer the coated popcorn onto a sheet of wax paper, spreading it out evenly. If desired, sprinkle with flake sea salt or mini M&M’s while the coating is still warm. Allow to cool and set before serving.

Notes

  • Store the popcorn in an airtight container or ziplock bag to preserve freshness.
  • Best served fresh or within 2 days for optimal texture and taste.
