Mashed Potato Frosting

  • 4-5 large russet potatoes
  • 6 Tbsp unsalted butter
  • 4 oz chive and onion cream cheese, softened
  • 1/3 cup warm milk, plus additional as needed
  • 1 tsp garlic salt
  • 1 tsp dried parsley or chives (optional)

Instructions

  1. Prep the Potatoes: Peel and cut the russet potatoes into 1-inch cubes. Place them in a deep medium saucepan, cover with cold water plus 1 teaspoon of salt, and bring to a boil over medium-high heat. Cook until the potatoes are fork-tender, about 15-20 minutes.
  2. Preheat Oven and Prepare Pan: While the potatoes cook, preheat your oven to 350°F (177°C). Spray a standard 12-cup muffin pan with cooking spray to prevent sticking.
  3. Mix the Meatloaf: In a large mixing bowl, combine the ground beef, condensed tomato soup, ketchup, mustard, Worcestershire sauce, milk, eggs, onion soup mix, granulated garlic, black pepper, and Italian seasoned breadcrumbs. Mix thoroughly using your hands or a large spoon until the mixture is well combined and holds together.
