A refreshing and tangy Mediterranean Coleslaw featuring crisp cabbage and carrots mixed with vibrant bell peppers, black olives, banana peppers, and creamy feta, all tossed in a zesty lemon garlic vinaigrette. Perfect as a light side dish or a flavorful salad for any occasion.

Ingredients

Lemon Garlic Vinaigrette

  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1/2 tsp garlic powder
  • 1 tsp dried oregano
  • 1/4 tsp salt
  • 1/4 tsp freshly cracked black pepper

Salad

  • 16 oz coleslaw mix (shredded cabbage and carrots)
  • 1/2 red bell pepper, diced
  • 1/4 cup chopped parsley
  • 2.25 oz can sliced black olives, drained
  • 1/2 12 oz jar banana pepper rings, drained
  • 2 oz feta cheese, crumbled

Instructions

  1. Prepare the lemon garlic vinaigrette: In a bowl or jar, combine the olive oil, lemon juice, garlic powder, dried oregano, salt, and freshly cracked black pepper. Whisk together or close the jar and shake vigorously until all ingredients are well incorporated. Set the dressing aside.
  2. Prep the vegetables and herbs: Dice the red bell pepper and chop the parsley finely. These will add fresh texture and flavor to the coleslaw.
  3. Combine the salad ingredients: In a large mixing bowl, add the coleslaw mix (shredded cabbage and carrots), diced red bell pepper, drained sliced black olives, drained banana pepper rings, crumbled feta, and chopped parsley. Toss gently to mix the components evenly.
  4. Toss with the vinaigrette: Pour the prepared lemon garlic vinaigrette over the combined salad ingredients. Toss thoroughly until every piece is coated with the tangy dressing, ensuring balanced flavors throughout.
  5. Let it marinate: Allow the slaw to sit for 15 minutes at room temperature to let the flavors meld together beautifully. Stir once more just before serving to redistribute the vinaigrette evenly.

Notes

  • Using fresh lemon juice will enhance the brightness of the vinaigrette.
  • Allowing the coleslaw to marinate helps soften the cabbage slightly and blend the flavors.
  • Adjust salt and pepper according to your taste preferences.
  • For a nuttier flavor, try adding a tablespoon of toasted pine nuts or slivered almonds as garnish.
  • This salad pairs wonderfully with grilled meats or as a side for Mediterranean dishes.
