Ingredients

Pizza Dough

  • 1 cup White Whole Wheat Flour
  • 1 ½ teaspoons Baking Powder
  • ½ teaspoon Salt
  • 1 Tablespoon Flax Seeds (optional)
  • 1 Tablespoon Hemp Seed Hearts (optional)
  • 1 cup Plain Greek Yogurt
  • 1 Tablespoon Extra Virgin Olive Oil

Pizza Toppings

  • 1 Tablespoon Extra Virgin Olive Oil
  • 2 cloves Garlic, minced
  • ½ cup Fresh Mozzarella Cheese
  • ¼ cup Goat Cheese, crumbled
  • 12 ounce jar Artichoke Hearts, drained
  • 2 Plum Tomatoes, sliced
  • ¼ cup Red Onion, thinly sliced
  • ¼ cup Orange Bell Pepper, thinly sliced
  • 3 Tablespoons Pine Nuts

Instructions

  1. Preheat oven: Set your oven to 400°F (200°C) to warm up and prepare for baking the pizza.
  2. Make the dough: In a large bowl, whisk together the whole wheat flour, baking powder, salt, flax seeds, and hemp seed hearts until evenly combined. Add the Greek yogurt and olive oil, and knead the mixture until a cohesive dough forms.
  3. Roll out dough: Lightly flour a clean surface and roll the dough into an 11-12 inch circle, making sure it’s evenly shaped for a uniform crust.
  4. Prepare base on baking sheet: Transfer the rolled dough onto a baking sheet lined with parchment paper to prevent sticking and ease cleanup.
  5. Coat dough with oil and garlic: Brush the dough evenly with olive oil and sprinkle the minced garlic over the surface to infuse the crust with aromatic flavor.
  6. Partially bake crust: Place the baking sheet in the preheated oven and bake the crust for 5 minutes. This firm ups the dough slightly before adding toppings.
  7. Add toppings: Remove the crust from the oven and evenly distribute the fresh mozzarella cheese and prepared vegetables (artichokes, tomatoes, red onion, and bell pepper) over the surface.
  8. Sprinkle goat cheese and pine nuts: Top the pizza with crumbled goat cheese and scatter pine nuts across for added texture and flavor.
  9. Bake pizza: Return the pizza to the oven and bake for an additional 10 minutes until the cheese is melted and toppings are tender.
  10. Broil to brown: Optionally, switch to broil for 1 minute to brown and crisp the cheese on top for a golden finish. Watch closely to avoid burning.

Notes

  • Use a pre-made pizza crust if short on time.
  • All-purpose flour can be substituted for white whole wheat flour.
  • If dough is too dry, add 1-2 teaspoons of water gradually.
  • If dough is too sticky, knead in a little flour carefully.
  • Mozzarella pearls or slices can be used interchangeably.
  • Swap toppings with your favorite Mediterranean ingredients such as pesto, balsamic glaze, hummus, ricotta, feta, halloumi, and fresh herbs.
  • Avoid overcrowding toppings to prevent soggy or undercooked crust.
  • Toast pine nuts before adding for best flavor by tossing with 1 teaspoon olive oil in a pan over medium heat for 1-2 minutes until golden.
  • Enjoy your Mediterranean-inspired homemade pizza fresh from the oven!
