A delicious fusion of Mexican flavors with a pizza twist that is simple to prepare and perfect for a family meal or gathering.

Ingredients

For the Tortillas

  • 1/4 cup vegetable oil (Use 1-2 tablespoons for a lighter fry)
  • 16 corn tortillas (6-inch)

For the Mexican Pizzas

  • 2 cups refried beans, warmed (16 ounce can)
  • 1 teaspoon vegetable oil
  • 1 pound ground beef
  • 1 tablespoon taco seasoning
  • 2 cups enchilada sauce (or use taco sauce)
  • 8 ounces cheddar cheese, shredded
  • Toppings: diced tomato, sliced black olives, green onion, hot sauce
  • Salt to taste

Instructions

  1. Fry the Tortillas: Heat the vegetable oil in a pan over medium heat. Add 1-2 corn tortillas at a time and lightly fry each side for 2-3 minutes until golden brown and crispy. Remove and drain on paper towels, then season lightly with salt.
  2. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the assembled pizzas.
  3. Cook the Ground Beef: In a pan, heat 1 tablespoon of vegetable oil over medium heat. Add the ground beef and cook for 6-7 minutes until browned and cooked through.
  4. Season the Meat: Stir in the taco seasoning and 1/4 cup water with the cooked beef. Simmer for 10 minutes to let the flavors meld.
  5. Assemble the Pizzas: On a baking sheet, lay out 8 of the crispy tortilla shells. Spread each with enchilada sauce, refried beans, and the seasoned taco meat. Layer with the remaining crispy tortillas on top.
  6. Add Sauce and Cheese: Spoon additional enchilada sauce over the top tortillas and sprinkle shredded cheddar cheese evenly over each pizza.
  7. Bake: Place the baking sheet in the preheated oven and bake for 10 minutes, or until the cheese has completely melted and is bubbly.
  8. Add Toppings and Serve: Remove from the oven and garnish with your choice of diced tomatoes, sliced black olives, green onions, and a drizzle of hot sauce. Serve immediately.

Notes

  • Instead of frying, lightly coat the tortillas with oil and air fry for 6-8 minutes or until crispy for a healthier alternative.
  • Use only 1-2 tablespoons of vegetable oil for pan frying to reduce fat content. Cook tortillas for 1-2 minutes per side until golden and crispy.
