This Mexican-Style Scrambled Eggs recipe offers a flavorful and colorful twist on classic scrambled eggs. Cooked with sautéed onions, serrano chilies, and fresh Roma tomatoes, these eggs are fluffy, moist, and perfect for a hearty breakfast or brunch. Served alongside warm tortillas, refried beans, salsa, and optional toppings like cilantro and queso fresco, this dish brings vibrant Mexican flavors to your morning table.

Ingredients

For the Eggs

  • 1 tablespoon neutral oil or butter
  • 1/2 small white onion, finely diced (about 1/2 cup)
  • 1-2 serrano chilies, stemmed and finely chopped (cored for milder heat; or substitute jalapeño for milder heat)
  • 1-2 small Roma tomatoes, seeded and diced (about 1 cup)
  • 6 large eggs
  • Salt and pepper to taste

For Serving

  • Warm corn or flour tortillas
  • Refried beans
  • Your favorite salsa
  • Chopped cilantro (optional)
  • Queso fresco (optional)

Instructions

  1. Heat the aromatics: Heat the oil or butter in a large pan over medium heat. Add the finely diced onion and serrano chilies. Cook for 4-5 minutes, stirring occasionally, until the onion softens and the chilies become fragrant.
  2. Add tomatoes: Stir in the diced Roma tomatoes and a pinch of salt. Cook for another 2-3 minutes to reduce the moisture from the tomatoes, which helps keep the eggs fluffy and prevents them from becoming watery.
  3. Prepare the eggs: In a bowl, beat the 6 large eggs with 1/2 teaspoon salt and a few grinds of black pepper until well combined and slightly frothy.
  4. Cook the eggs: Reduce the heat to medium-low. Pour the beaten eggs into the pan with the sautéed vegetables. Gently push the eggs from the edges toward the center with a spatula, forming soft curds. Cook for 2-3 minutes until the eggs are just set but still moist and tender. Avoid overcooking to prevent dryness.
  5. Serve: Plate the scrambled eggs with warm corn or flour tortillas, refried beans, and your favorite salsa. Garnish optionally with chopped cilantro and queso fresco for extra flavor. These eggs are also delicious served on toast.

Notes

  • For milder heat, remove the seeds from the serrano chilies or substitute with jalapeños.
  • Use fresh and ripe Roma tomatoes for best flavor and texture.
  • If you prefer creamier eggs, add a splash of milk or cream when beating the eggs.
  • These eggs pair wonderfully with avocado slices or Mexican crema.
  • Adjust seasoning as needed before serving.
