Ingredients

Blue Cheese Dressing (optional)

  • 1 oz Blue cheese, Gorgonzola
  • 1/4 cup Mayonnaise
  • 1/4 cup Sour cream
  • 1 tbsp Fresh lemon juice
  • 2 tbsp White vinegar
  • 1 tbsp Finely chopped chives
  • 2 tbsp Heavy cream
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Three Cheese Spread

  • 4 oz Cream cheese, softened
  • 1/4 cup Sharp cheddar cheese, shredded
  • 1/4 cup Monterey Jack cheese, shredded
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1/2 tsp Salt
  • 1 cup Sharp cheddar cheese, divided among sandwiches

Buffalo Chicken Filling

  • 2 cups Rotisserie chicken, shredded
  • 1/2 cup Buffalo sauce
  • 1/4 cup Ranch dressing
  • 1/2 tsp Salt

Bread Coating

  • 1/4 cup Mayonnaise
  • 1/4 cup Butter, softened
  • 12 slices Buttermilk bread (or your favorite bread)

Instructions

  1. Prepare Blue Cheese Dressing: In a small bowl, whisk together mayonnaise, sour cream, lemon juice, white vinegar, and heavy cream until smooth. Fold in crumbled Gorgonzola blue cheese and finely chopped chives. Season with salt and black pepper to taste. Set aside chilled until serving.
  2. Make Three Cheese Spread: Combine softened cream cheese, sharp cheddar cheese, Monterey Jack cheese, garlic powder, onion powder, and salt in a bowl. Mix until all ingredients are thoroughly incorporated and smooth.
  3. Prepare Buffalo Chicken Filling: In a medium bowl, toss shredded rotisserie chicken with buffalo sauce, ranch dressing, and salt. Stir well to coat the chicken evenly with the sauce mixture.
  4. Preheat Mickey Waffle Maker and Prepare Bread: Turn on your Mickey waffle maker and let it heat to medium. In a separate small bowl, mix together softened butter and mayonnaise to create the bread coating. Carefully remove the crusts from all slices of bread using a serrated knife. Spread the butter-mayo mixture evenly over one side of all 12 bread slices.
  5. Assemble Sandwiches: Place 6 slices of bread buttered side down. Spread an even layer of the three cheese spread on each. Top with the buffalo chicken mixture, then sprinkle with the reserved sharp cheddar cheese. Cover each sandwich with the remaining 6 slices of bread, buttered side facing up, to close them.
  6. Cook Sandwiches: Lightly spray the Mickey waffle maker griddle with nonstick cooking spray. Place one sandwich at a time onto the waffle maker and firmly press down. Cook for about 5 minutes or until the bread is golden brown and crispy and the cheese inside is fully melted.
  7. Serve: Remove sandwiches carefully. Serve warm accompanied by the homemade blue cheese dressing and optional celery sticks for a refreshing crunch.

Notes

  • These grilled cheese sandwiches can be prepared in a skillet if you don’t have a Mickey waffle maker; simply cook on medium heat flipping until golden brown and cheese melts, about 3-4 minutes per side.
  • You can leave the crust on the bread if preferred; just adjust the amount of spread and filling per sandwich accordingly.
  • Yield may vary depending on the size of bread used; try to divide the cheese spread, buffalo chicken mixture, and shredded cheddar evenly among the sandwiches for consistent portions.
  • For a spicier kick, increase the buffalo sauce quantity in the chicken filling.
