These Mini Pumpkin Pizzas are a delightful seasonal treat perfect for autumn gatherings or a fun dinner. Combining the comforting flavors of pumpkin and classic pizza ingredients like pepperoni, mozzarella, and tomato herb sauce, these bite-sized pizzas are topped with fresh basil and a sprinkle of paprika for an extra burst of flavor.

Ingredients

Pizza Base

  • 2 x 280g packs ready-rolled pizza dough

Toppings

  • 60g pizza pepperoni slices, quartered
  • 80g grated mozzarella
  • 100g tomato and herb pizza sauce
  • 15g fresh basil leaves, roughly chopped, plus small leaves to serve

Egg Wash and Seasoning

  • 1 egg yolk
  • 1 tsp paprika

Instructions

  1. Preheat and Prepare Dough: Preheat your oven to 220°C (428°F). Unroll the pizza dough onto a lightly floured surface and roll out gently if needed. Using a round cookie cutter or a glass (approx. 8-10 cm diameter), cut out mini pizza bases from the dough.
  2. Apply Sauce and Toppings: Spread a small spoonful of the tomato and herb pizza sauce evenly over each mini pizza base. Sprinkle grated mozzarella over the sauce, then scatter the quartered pepperoni slices and roughly chopped fresh basil leaves on top.
  3. Prepare Egg Wash and Season: In a small bowl, whisk the egg yolk with the paprika until combined. Brush the exposed edges of each mini pizza with the paprika egg wash to create a flavorful golden crust when baked.
  4. Bake the Mini Pizzas: Place the mini pizzas on a baking tray lined with parchment paper, spacing them slightly apart. Bake in the preheated oven for 10-12 minutes or until the edges are golden and the cheese is bubbling and slightly browned.
  5. Garnish and Serve: Remove from the oven and let cool slightly. Garnish with the small fresh basil leaves for a bright, fresh finish. Serve warm for the best taste experience.

Notes

  • You can substitute pepperoni with other toppings like mushrooms or olives for a vegetarian option.
  • Make sure not to overload the mini pizzas to prevent sogginess.
  • If you prefer a crispier crust, bake on a preheated pizza stone or tray.
  • These mini pizzas are best eaten fresh but can be reheated in the oven for a few minutes.
