Ingredients

Salad Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 cup shelled edamame
  • 1 cup snap peas, optional, when in season
  • 2 cups shredded cabbage
  • 1 cup shredded carrots
  • 4 green onions, thinly sliced
  • Roasted peanuts or almonds, chopped, optional for garnish

Miso Sesame Dressing

  • 3 tablespoons white or chickpea miso
  • 2 tablespoons tamari
  • 2 tablespoons rice vinegar
  • 2 tablespoons roasted sesame seeds
  • 1 tablespoon lime juice
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon sweetener (honey, maple syrup, or coconut sugar)
  • 1 teaspoon chili crisp or chili flakes, adjust to taste

Instructions

  1. Combine Salad Ingredients: In a large mixing bowl, add the drained and rinsed chickpeas, shelled edamame, shredded cabbage, shredded carrots, sliced green onions, and if using, snap peas. Gently mix to combine all the vegetables and beans evenly.
  2. Prepare the Dressing: In a small bowl, whisk together the white or chickpea miso, tamari, rice vinegar, roasted sesame seeds, lime juice, toasted sesame oil, your choice of sweetener, and chili crisp or chili flakes until the mixture is smooth and well combined.
  3. Toss Salad with Dressing: Pour the prepared miso sesame dressing over the salad ingredients. Use a large spoon or salad tongs to gently toss the salad, ensuring every ingredient is evenly coated in the flavorful dressing.
  4. Serve and Garnish: Transfer the dressed salad to serving bowls. Optionally, sprinkle chopped roasted peanuts or almonds on top for added crunch and nuttiness.
  5. Optional Chilling: Serve immediately or refrigerate the salad for about 30 minutes to allow the flavors to meld together more deeply for enhanced taste.
  6. Storage: Store any leftovers in an airtight container in the refrigerator for up to 3 days, making this salad a practical and delicious meal prep option.

Notes

  • Snap peas are optional and best used when in season for added freshness and crunch.
  • You can substitute white miso with chickpea miso for a different flavor profile or based on availability.
  • Adjust the amount of chili crisp or flakes depending on your spice preference.
  • This salad can be customized with other crunchy nuts or seeds as garnishes.
  • For a vegan option, use maple syrup or coconut sugar as the sweetener instead of honey.
  • Refrigerating the salad before serving helps the flavors to blend beautifully.
