Ingredients

Mussels and Steaming Liquid

  • 4 lbs fresh in-shell mussels, cleaned
  • Pinch saffron + 2 tbsp hot water
  • ½ cup (120 ml) dry white wine, such as Sauvignon Blanc

Sauce

  • 2 tbsp butter
  • 1 cup finely chopped white onion (about half a medium onion)
  • 2 cloves garlic, finely minced
  • 1 tsp yellow curry powder
  • 2 tbsp cognac
  • 2 tbsp all purpose flour
  • 1 cup (240 ml) plain unsweetened oat milk or other milk of choice
  • Salt and pepper to taste
  • ⅓ cup roughly chopped parsley

Instructions

  1. Steep the saffron: In a small dish, place a pinch of saffron threads in 2 tablespoons of hot (not boiling) water. Let it steep for at least 15 minutes to release its color and flavor.
  2. Clean the mussels: Rinse mussels under cold running water. Remove any beards by pulling them off, and use a metal spoon to scrape barnacles and debris from the shells to ensure they’re clean and grit-free.
  3. Steam the mussels: Put the cleaned mussels into a large lidded pot. Line a large colander with 2-3 layers of cheesecloth placed over a bigger pot or bowl to catch the liquid. Steam the mussels over high heat for about 4 minutes, or until all the shells have opened. Strain the mussels through the cheesecloth-lined colander, reserving about 1 to 1¼ cups of the steaming liquid. Discard any mussels that remain closed. Keep the steamed mussels covered and warm.
  4. Prepare the sauce base: In a saucepan over medium heat, melt 2 tablespoons of butter. Add the finely chopped onions with a pinch of kosher salt and sauté for 1 minute until softened. Add the minced garlic and yellow curry powder, cooking for an additional 2 minutes to develop the flavors.
  5. Add cognac and flour: Pour in 2 tablespoons of cognac and let it boil off for about 3 minutes until most of the liquid evaporates. Stir in 2 tablespoons of all-purpose flour and cook for 1 minute, whisking constantly to prevent lumps.
  6. Incorporate liquids: Slowly whisk in the reserved steaming liquid from the mussels and the saffron water. Stir until the sauce is smooth, then let it simmer gently for 2 to 3 minutes to thicken slightly.
  7. Finish the sauce: Add 1 cup of oat milk (or your milk of choice), bring back to a gentle simmer, and cook for another 2 minutes. Season the sauce with salt and pepper to taste.
  8. Serve: Place the steamed mussels on a serving platter or serve directly from the pot. Stir the chopped parsley into the sauce and pour it evenly over the mussels. Serve immediately with crusty bread to soak up the flavorful saffron cream sauce. Enjoy!
