This Mushroom Cheeseburger Casserole is a hearty, savory dish combining ground beef, mushrooms, garlic, and a rich blend of Swiss and goat cheeses. Baked to perfection, it features a melty, cheesy top with fresh scallions, making it a comforting and delicious meal perfect for any occasion.

Ingredients

Main Ingredients

  • 1 pound ground beef
  • 1 pound mushrooms, sliced
  • 5 cloves garlic, thinly sliced
  • 8 slices Swiss cheese, finely chopped
  • 1 cup crumbled goat cheese
  • 1/3 cup thinly sliced scallions
  • 1 teaspoon table salt

Instructions

  1. Prepare: Preheat your oven to 375°F (190°C). Set aside an 8×8 inch baking dish for assembling the casserole.
  2. Cook Beef & Mushrooms: Heat a high-sided pan over high heat and add ground beef along with the salt. Crumble the beef with a stiff utensil and cook until browned and releasing its liquid, a few minutes. Without removing the beef, add the sliced mushrooms and thinly sliced garlic to the pan. Continue cooking, stirring occasionally, until the mushrooms shrink and most of their liquid evaporates, about 6 to 8 minutes. The only liquid left should be the beef grease.
  3. Assemble Casserole: Transfer the beef, mushroom, and garlic mixture to the prepared baking dish. Stir in the crumbled goat cheese and two-thirds of the chopped Swiss cheese until well combined and the goat cheese starts to melt, coating the mixture nicely. Evenly sprinkle the thinly sliced scallions over the top, then distribute the remaining one-third of the Swiss cheese across the scallions. Smooth the surface so the casserole is flat and even.
  4. Bake & Serve: Place the baking dish in the preheated oven and bake uncovered at 375°F for about 15 minutes or until the casserole is very hot, bubbling around the edges, and the cheese is completely melted. Let the casserole cool at room temperature for 5 minutes before cutting into 4 equal portions. Serve hot and enjoy. Store any leftovers in the refrigerator.

Notes

  • Note 1: Use lean ground beef for best results and less grease.
  • Note 2: Cremini or white button mushrooms work well in this casserole.
  • Note 3: Finely chopping the Swiss cheese helps it melt evenly throughout the casserole.
  • Note 4: Fresh goat cheese adds a creamy tangy flavor that complements the beef.
  • Note 5: Scallions add fresh brightness and a mild onion flavor to the top of the casserole.
  • Note 6: An 8×8 inch baking dish gives the perfect thickness for even cooking.
  • Note 7: A high-sided pan helps contain all the ingredients and liquids during cooking.
  • Note 8: Stirring the cheeses into the hot beef mixture allows the goat cheese to melt perfectly.
  • Note 9: Make sure the casserole surface is flat to ensure even melting of the cheese topping.
  • Note 10: Serve hot for the best texture and flavor.
  • Note 11: Store leftovers covered in the refrigerator for up to 3 days.
