This Mushroom Walnut Pate is a savory, creamy spread made from sautéed cremini mushrooms, toasted walnuts, and fresh herbs. Perfect as a flavorful appetizer or snack, this pate combines earthy mushrooms with the rich crunch of walnuts and a hint of tang from balsamic vinegar and miso paste. It is a versatile vegan and gluten-free option that pairs well with crackers, bread, or fresh vegetables.

Ingredients

Vegetables and Aromatics

  • 1 cup red onion, chopped
  • 2.5 cups cremini mushrooms, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, minced
  • 1 teaspoon fresh thyme, chopped
  • 2 tablespoons fresh parsley, chopped

Oils and Vinegars

  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar

Nuts and Pastes

  • 1 cup walnuts, toasted and unsalted
  • 2 tablespoons white miso paste

Condiments and Seasonings

  • 1 tablespoon Dijon mustard
  • ½ teaspoon black pepper
  • Salt, to taste

Instructions

  1. Sauté Vegetables: Add the chopped red onion, cremini mushrooms, and olive oil to a pan and sauté over medium heat until the onions and mushrooms soften and start to caramelize. This process brings out the natural sweetness and depth of flavor from the vegetables.
  2. Deglaze and Flavor: Deglaze the pan with balsamic vinegar to lift the flavorful browned bits from the pan, then add the minced rosemary, chopped thyme, and minced garlic. Sauté this mixture for another 3-5 minutes to infuse the herbs and garlic into the softened mushrooms and onions.
  3. Cool and Blend: Let the mushroom and onion mixture cool slightly to avoid overheating the food processor. Transfer the mixture to a food processor along with toasted walnuts, fresh parsley, white miso paste, Dijon mustard, and black pepper. Blend until smooth and spreadable. Scrape down the sides of the processor as needed to ensure even blending.
  4. Season and Adjust: Taste the pate and add salt or other seasonings as needed to balance the flavors. Blend briefly again if additional ingredients are added.
  5. Serve or Store: Serve the pate immediately at room or slightly chilled temperature. Alternatively, transfer to an airtight container and refrigerate until ready to use. The pate pairs wonderfully with crackers, breads, or fresh vegetables.

Notes

  • Dried herbs can be substituted: use a scant tablespoon of dried rosemary and a scant teaspoon of dried thyme.
  • If your balsamic vinegar has a sweeter profile than desired, reduce the amount and substitute with a less sweet vinegar, adjusting to taste.
  • Scraping the sides of the food processor when blending ensures a smooth and even consistency.
  • The pate can be stored refrigerated for up to 5 days and may firm up slightly when chilled.
