Ingredients

Beef and Seasonings

  • 3 pounds beef chuck roast
  • 1 tablespoon avocado or olive oil
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon dried oregano
  • 1 tablespoon smoked paprika
  • 1 teaspoon cumin powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 limes

Tortillas and Serving

  • 14 tortillas
  • Optional toppings: diced onions, cilantro, hot sauce

Instructions

  1. Trim and Cut Beef: Trim any excess fat from the chuck roast and cut the beef into 3-4 inch chunks to ensure even cooking and easy shredding.
  2. Sear the Beef: Heat 1 tablespoon of oil in a skillet over medium-high heat. Once hot, sear the beef chunks on all sides until browned. This step adds depth of flavor but can be skipped if you are short on time.
  3. Prepare Crock-Pot: Place the seared beef chunks into the crock-pot and pour in 1 cup of beef broth to keep the meat moist during cooking.
  4. Mix and Add Spices: In a small bowl, combine chili powder, oregano, smoked paprika, cumin, garlic powder, onion powder, salt, and pepper. Reserve 2 tablespoons of this spice blend for later and sprinkle the rest evenly over the beef in the crock-pot.
  5. Slow Cook: Cover and cook on low for 6-7 hours until the beef is fork-tender and shreds easily.
  6. Shred the Beef: Transfer the beef chunks to a large plate or bowl. Shred using two forks. Mix in the reserved 2 tablespoons of seasoning and the juice of 1-2 limes to add freshness and enhance flavor. If preferred, substitute lime juice with 2-4 tablespoons of reserved beef broth from the crock-pot.
  7. Assemble Tacos: Warm your tortillas and fill each with the shredded beef. Add your favorite toppings such as diced onions, cilantro, and hot sauce for a personalized touch.

Notes

  • Searing the beef adds flavor but can be skipped to save time.
  • Adjust lime juice to taste for desired citrus brightness.
  • Do not shred the beef in the crock-pot to avoid excess grease.
  • Use beef broth from the crock-pot to keep shredded beef moist if not using lime juice.
  • Serve with a variety of fresh toppings like diced onions, cilantro, or avocado for extra flavor.
