This No Bake Key Lime Pie Cottage Cheesecake Jars recipe offers a creamy, tangy dessert with a crunchy granola crust. Combining cottage cheese, Greek yogurt, and key lime juice creates a refreshing cheesecake filling, topped with light vanilla whipped cream. Perfect for a quick and healthy dessert served in individual jars, it’s easy to prepare without baking.

Ingredients

Crust:

  • 1 cup granola (blended)

Filling:

  • 1.5 cups cottage cheese (Good Culture low fat 2%)
  • 1/2 cup plain Greek yogurt
  • 1 tsp vanilla bean paste (or vanilla extract)
  • 1/4 cup maple syrup
  • 2 tbsp key lime juice
  • Zest from 2 limes

Topping:

  • 1/2 cup heavy whipping cream
  • 1 tsp vanilla bean paste

Instructions

  1. Prepare the Crust: Add granola to a blender and blend until crushed and you have a fine powder. Divide the granola powder evenly among three 8oz glass jars to form the crust layer.
  2. Make the Filling: In a food processor, combine cottage cheese, Greek yogurt, vanilla bean paste, maple syrup, key lime juice, and lime zest. Process for 12-15 seconds until smooth and creamy, being careful not to overprocess to avoid a watery texture. Divide the filling evenly among the jars over the crust.
  3. Chill the Filling: Place the jars with the filling in the fridge to set while preparing the whipped cream topping.
  4. Prepare the Whipped Cream: In a stand mixer, whisk heavy whipping cream on high speed for 3-4 minutes. Add vanilla bean paste during the last minute of whipping. Optionally, add maple syrup for sweetness. Transfer the whipped cream into a piping bag.
  5. Assemble and Garnish: Pipe the whipped cream atop each cheesecake jar. Garnish with additional lime zest and a lime wedge. Serve chilled and enjoy!

Notes

  • The brand of cottage cheese matters: Good Culture 2% offers a thick and creamy texture suitable for blending; other brands may be too watery and affect the texture.
  • Do not over-blend the filling; 10 to 15 seconds is sufficient to achieve smoothness without thinning the mixture.
  • If the filling becomes watery due to over-blending, chilling the jars for several hours will help thicken them as they set.
